I'm so glad this section exists because it helps to clarify the myriad misconceptions about Mexico and Mexican food as opposed to what average Americans think is Mexican food!.

Mexican rice is Mexican rice!. Not Spanish!. Mexico fought for its independence and won, close to 200 years ago!.

I have lived in Mexico for over thirty years and rice is one of the staples!. You take one cup of dry rice, put it in a sieve and wash out the starch in running water!. Let it drain!. Heat some oil (not olive) and fry some slices of onion and garlic!. Remove when they start to blacken, this is to flavor the oil!. Cook the drained rice in that oil until it turns opaque, this is a very important step because the rice can cook pretty quickly and darken or burn, so keep stirring until it no longer sticks to the pan or is totally opaque!. Then you need to decide whether you want white, red, green or whatever color and flavor!.
For red rice you can use half a cup of tomato puree or paste, pour into the rice and stir briskly, then add two cups of water, chicken boullion, veggies, like sweet corn, carrots, potatoes, peas, broccoli, whatever, some salt, a few sprigs of cilantro, stir and cook on medium heat, until the water boils, then lower the flame, and cover, let it cook for like twenty minutes!. After twenty minutes almost all of the water should have evaporated, if not sure, use a fork to slightly separate the rice and take a look at the bottom, then replace the rice with the fork and cook uncovered for a few minues!. Do not stir or anything else until after all the water has evaporated!. The rice should be fluffy and light!.
For white rice use plain chicken boullion dissolved in two and a half cups of water, add veggies, cilantro and salt!. Cook as indicated!. You can add a nice touch of flavor by pouring some fresh lemon juice over the white rice, it turns it whiter!.
For green rice, blend two and a half cups of water with the chicken boullion, some salt, and a cup of cilantro!. The water will turn a bright green but it will flavor the rice and give it a nice touch of color!. Add veggies, like strips of red, orange, green or yellow, bell pepper!.

I have made rice with mustard, dissolved in the water and it gives my rice a nice yellow color!. Or you can try some Spanish saffron, which I don't use very often because it is horribly expensive, although the rice looks a real bright saffron yellow and it tastes and smells great!. Goya produces some intesting products for cooking rice, then come in little packets and you add the powder to the water!. Goya is a Miami-based company by the way!.

Sometimes, and I mean sometimes, I have seen people cook their rice with a whole serrano or jalape?o pepper!. The resuting rice is not hot at all!.

Most Mexicans do not prepare their rice with meat or beans added, at least I would not and neither would any of the people I know!. That is best left for the poor tourists who don't know any better, especially if anyone is daft enough to serve them that!.Www@FoodAQ@Com

This Mexican rice is made with rice, onion, green bell pepper, garlic, tomatoes, and spices!.
Cook Time: 30 minutes

Ingredients:

1/2 cup chopped onion
1/4 cup chopped green bell pepper
1 large clove garlic, minced
2 teaspoons canola oil
1 cup long-grain rice
1 can (about 15 ounces) diced tomatoes with liquid
1 teaspoon chili powder
1/4 teaspoon ground cumin
1/2 teaspoon salt
1 1/2 cups beef broth
Preparation:

In a heavy skillet sauté onion, green bell pepper and garlic until onion is softened!. Add rice to skillet and cook over medium-high heat until rice has browned!. Add tomatoes, chili powder, salt, and beef broth!. Bring to a boil; cover, lower heat, and simmer until liquid has been absorbed, about 20 minutes!. Taste and add more salt if needed!.

Perhaps you mean "Spanish Rice"!? Here's an easy recipe:

2 tablespoons vegetable oil
1 cup uncooked white rice
1 onion, chopped
1/2 green bell pepper, chopped
2 cups water
1 (10 ounce) can diced tomatoes and green chiles
2 teaspoons chili powder, or to taste
1 teaspoon salt
cilantro leaves

DIRECTIONS
1!. Heat oil in a deep skillet over medium heat!. Saute rice, onion, and bell pepper until rice is browned and onions are tender!.
2!. Stir in water and tomatoes!. Season with chili powder and salt!. Cover, and simmer for 30 minutes, or until rice is cooked and liquid is absorbed!. Garnish with cilantro leaves!.Www@FoodAQ@Com

Heat about 3 tablespoons of oil in a large pan!. Add two cups of white rice to the skillet and cook the rice until toasted, about 3-4 minutes!. Add 1/2 minced onion, two cloves of minced garlic, and season with salt, pepper, 1 tablespoon each of cumin and chili powder!. Stir to combine!.
Pour in 1 8oz can of diced tomatoes with green chiles!. Add 1 cup of chicken broth, or enough to cover the rice!. Bring to a boil and reduce heat to a simmer!. Cover and cook about 30 minutes or until rice is tender!. Serve with lime wedges and shredded cilantro!.Www@FoodAQ@Com

Make about 2c!. cooked white rice, saute small onion and a bell pepper and garlic in olive oil til tender!. Add to rice with a can of whole tomatos juice and all!. You can add a little salsa or cilantro!. I put a little v-8 in too!.Www@FoodAQ@Com
