Leftover rice is a perfect for stuffing vegetables! Add some cooked peas, grated carrots, some raisins, herbs like cilantro or basil, maybe some chickpeas or pinenuts and a tsp of your favorite curry powder (or any seasoning blend) and fill a large tomato, any color of bell pepper, zucchini or yellow squash!.!.!.!.!.!.!. bake at 400 deg F for 8-10 minutes and you have a wonderful new dish!.

Leftover rice is best to make fried rice!. I am Chinese so I do that all the time with leftover rice, it's cheap and easy to make and it's filling and yummy!. A lot of recipe says to chill the rice so that it gets harden and easy to stir fry, well I disagree!. I think rice is easier to cook when it s hot and fresh!. It doesn't take too much to take it apart!. So here is what you can do with your leftover rice!.

Beat one egg and pour it in a big stir fry pan, It's almost like making egg omelet but you want swirl around the pan to get it even in the pan, make it real thin, when the egg is almost set, put rice in and stir all together, that way it will give you nice scramble eggs bits evenly distributed in the rice, After stir fry for a few minture, put in a little bit ketchup and and little salt or soy sauce for taste, stir fry little bit and you are done!.

If you think that's too plain, you can always chop up some green onion, diced ham, chicken, any kind of meat and some dice onion, shredded cabagage and stir fry all together!.

-Chinese fried rice (in a wok, guozi, with few hot oil, some minced vegetables, beaten egg, smoked ham or shrimps if you like, a little soy sauce)
- Add some minced bacon, cheese and pickled vegetable!. Fill some cleaned bell peppers, put in the oven, for some middle east stuffed peppers

- Add little cubes of ham and cheese, green peas if you like!.
Beat an egg with salt!. grind some old bread !. If you don't have you can do with frying powder!. Make little balls with your leftover rice in your hand!. Pass the ball in the egg, then in the ground bread or frying powder!. Fry shortly up to when golden in high temperature oil!. (Arancini, from sicily)

this may sound disgusting, but its actually pretty good!.!.!.

add some beaten eggs, a couple of spoons of curry powder, some spring onions, grated carrot and grated zucchini!.!.!.mix it all together and put it into a greased quiche dish!. Slice tomatoes to go on the top, and bake in the oven until set!. This is also really good just to eat cold as well!!
