Name of Indian potato-stuffed pastry?!


Question: Name of Indian potato-stuffed pastry!?
In high school, an Indian friend of mine sometimes brought triangle-shaped stuffed pastries to school!. I remember that the inside was stuffed with mashed potato and peas, other vegetables, and liberally-added spices!. The pastries were spicy and had that characteristic Indian-food taste!.

It is called Samosa!. Samosa was created in the royal kitchen of Akbar the great a Mogul ruler of India during 1550s!. The recipe is well documented in the Ain-I-Akbar!.

The pastry shell is called Khoal!. It is made of refined flour called Maida!. The Ghee (Clarified butter) is used as shortening to cut the flour to make pastry dough!. Cooked vegetables such as boiled potatoes and peas along with several spices are used to make the filling!. The pastry flour is rolled out, as a semi-circle cookie!. The filling is placed, and the pastry folded over to give the triangular shape!. The pastry is then deep fried in hot oil!.

it is samosa, they are great, they are usually vegetarin, made with a pastry using lard, and then filled with vegs cooked!. i!.e!. potato, red potato, onios, celery and a reasonable dose of chili and curry powder, they are then deep fried and are drained on paper towls
