it's a cut of beef , alway's thin, about 1/4 of an inch mostly used as a breakfast steak,pounded and sliced in strips for chile con carne -red or green, and also battered and or crusted for bistec very much like a german shnitzel , or marinated and grilled for asada, best cut is skirt,but this is usually cheaper chuck portion's of the cow!.!.Www@FoodAQ@Com
