When I was a chef and worked in Japan I had all the eels they serve there, from stewed to grilled the sushi unagi and in rice dishes too!.
Conger eels are the biggest and pike eels the smaller and boniest, and then the fresh water baby ones which are prized for stews and soups, the stews like those the sumo wrestler's eat the "Chanko" are the best, the grilled ones are the larger conger eels most found in the sushi places grilled and topped with the sweet mirin and soy sauce glaze on sushi or sashimi platters!.Www@FoodAQ@Com

Joo-hyun is right!. Im from Singapore & have eaten grilled eel (by mistake), which happened to be delicious but there were too many bones & it took away the mood to enjoy eating it!.Www@FoodAQ@Com
