I am a Chef!. I specialize in Chinese cuisine!. My wife was born in Canton, China!. I speak Cantonese!. Would you be so kind as to be a little more specific!. I live in New York City, Chinatown East in fact, and I can honestly tell you that there will never be a singular and correct answer!. Contact me anytime you wish though and I'll be happy to reply!.Www@FoodAQ@Com

There are many different groups of chinese and different groups have different foods, though most of the ingredients used are the same!.

there are many ways to combine chinese food items to make another unknown dish, since many different ingredients compliment with others!. of course, there are also ingredients which should not be cooked with some others, because they don't go well together!. for example, when you cook chinese green leafy vegetables, you season them with garlic and not usually ginger!. the garlic fragrant compliments the vegetables in a way!. ginger is used more often for meats like fish and chicken!. but when you change a style of cooking, you can also change the seasoning!.

there are also usually special dishes with proper names that should not be cooked in any other way!. these dishes are usually in restaurants as customers may order these specialty dishes!. but at home, these dishes won't be cooked that often, unless on a special occasion!.

not to forget, chinese match their ingredients sometimes with the way they are feeling at the point in time and if they need any foods with medicinal properties!. for example, plain bittergourd soup can help to relieve headaches because it has a "cooling" effect, or "bak kut teh" (meat bone tea, literal translation) is a soup drank that has a "heating" effect!. so if they feel too "hot", they may drink something "cooling" to bring down the heat!. (just various examples listed)

this was from my other answer to another question similar to yours, hope it helps!.Www@FoodAQ@Com

I'm not sure exactly what you're asking!. Chinese like Americans come from different regions!. Northern Chinese cuisine is vastly different from Southern, Eastern, or Western regions!. Some regions have specialty food in the spicy range, while others might prefer noodles and breads!. A typical meal might consists of stir-fry veggies (usually greens), a dish of protein such as poultry, fish, or red meat!. However, meat dishes are usually cooked with a combination of vegetables!. Chinese typically eat these dishes with rice!. They prefer choosing fresh ingredients over frozen food!. Usually they shop on the day they're going to prepare their meal!. However, it doesn't always work out that way once Chinese are not living in their native homeland!. They usually ended up with a hectic schedule once they settled in the host country!.Www@FoodAQ@Com

Chinese dishes are categorized as vegetables, fish, pork, chicken, beef, and seafood once in a while!. When selecting the food, always pick out the ones that are most fresh!. There are so many ways of preparing and cooking!.Www@FoodAQ@Com

They go to the market and buy what looks good, just like we do!. Then they bring it home and cook it!. Then they bring it to the table and eat it!. Www@FoodAQ@Com

You should check out some chinese cook books!. They don't eat like you eat "American chinese food" like General Tso's!. They tend to eat healthy stuff and very exotic foods like turtle, quail eggs, etc etc !. Www@FoodAQ@Com
