Depends on what kind you're looking for!. Traditionally, salami is made from beef or pork or a combination of the two, along with spices, wine or liquor, and preservatives!. The salami is either dry cured or steamed and dried!. Sausage is made out of ground pork, seasonings etc!. However, with the newer sausages, you can also find them in chicken, turkey, all-beef, and combinations of veges, cheeses, meats or fish, and seasonings!. I am a former chef from Canada, and have had various salamis and cured sausages and fresh from all over the world, correct most salamis are beef or pork, I have had venison, reindeer and ostrich, even yak!.

Sausages to are predominantly pork or beef, the one person said something about chicken, turkey, I have made seafood and salmon based one, I like Moroccan Lamb sausage called Mergiz!.

I have also had reindeer, venison, pheasant and made ones with musk ox, buffalo and wild boar!. Even serve duck sausage in one hotel kitchen I was in!.Www@FoodAQ@Com

As in type of meat!? Pork is the most common, especially commercially made products!.

As in which part of the animal!? Typically butt (which is the pork shoulder), loin or ham (hind end)!.Www@FoodAQ@Com

Well I am german and in germany Salami is made of pork !.!.!. but when I was young there was the tale (!?) original Hungarian Salmi is made of donkey!.Www@FoodAQ@Com

You can buy "beef", or a mix of pork/beef + additives and also venision so, it really depends on what the package reads!.
