Most Italians would say that there is no such thing as Italian food!. Most foods/dishes are in fact regional, particular to one place!. Pizza for example is from Naples, Pasta Bolognaise is from Bologne!. If you go to Puglia, you won't find anything that you might find in Milano!. If you do go to a pizza restaurant in Milan, chances are it's a tourist restaurant!.
There are some universal foods, with regional twists; salcisse (sausages), formaggio (cheese), bread, wine!. But they're all used in different ways in different places!.

One of the chefs at school brought in a cookjbook called Regional Italian!. It has many different recipes that utilize as many proteins as you can think as well as veg and pasta!. We were perfecting his idea af Bagna Caude which is an anchovy dip for crudite!. Italians love FOOD!. Sure most of it includes pasta, but still very creative!. Www@FoodAQ@Com
one of my recent faves (to make and eat) is eggplant parmesan - i'm not even a vegetarian but it's SO GOOD!
i also made chicken cacciatore for the first time recently - it was delicious, & pretty healthy too!.
