I have a friend whose family owns a soy sauce/vinegar factory!. She told me that it was just food coloring!. but maybe because their soy sauces are inexpensive!.

Some brands do contain coloring but the black or dark brown color is because the soybeans are fermented along with salt!. This produces richer flavors that are described as Umami in Japanese!. Www@FoodAQ@Com
