Fans of Mexican food: I need mixican dishes.?!
So having a mexican theme dinner with family!. Need a good dish to make for about 6 hungry adults!. And no one is picky!.

Here is a recipe that I created last week because I was craving tamales but didn't want to spend $5!.00 on corn husks to make them
Tamale Squares
4 large pork chops cooked in Mojo (Broth reserved), finely chopped
2 cups of Masa Corn Flour (Not Corn Meal)
1 ? cups of chicken broth plus broth from Pork Chops
? tsp cumin
1 tsp baking powder
? tsp salt
Mix Masa with broth, baking powder, salt, and cumin until well blended!. Consistency should be like peanut butter!. Shred or cube pork into small pieces!. Layer in a casserole dish that has been sprayed with nonstick cooking spray!. Sprinkle with cumin, garlic, salt, and pepper!. Top with 2 finely chopped shallots!. Top with 1 can of drained Rotel tomatoes spread evenly!. Top with masa mixture!. Cover with aluminum foil and bake at 400o for 20 minutes, then remove foil, top with cheese, and bake 10 additional minutes until lightly browned!.

2 pounds pork butt roast with bone
2 tablespoons achiote paste
1/3 cup orange juice
2/3 cup fresh-squeezed lemon juice
2 habanero peppers, seeded and chopped
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon ground coriander
salt and pepper to taste
1/2 cup red wine vinegar
2 red onions, sliced into rings
DIRECTIONS
Poke holes all over the pork with a fork!. Rub achiote paste all over the pork, and set aside!. In a large bowl, mix together the orange juice, lemon juice, and habanero peppers!. Mix in the cumin, paprika, chili powder, coriander, salt and pepper!. Place pork in the mixture, cover, and refrigerate overnight, turning two or three times!.
Preheat the oven to 325 degrees F (165 degrees C)!. Wrap the pork and marinade in aluminum foil or banana leaves that have been soaked in water for 30 minutes!. Place into a casserole dish, and cover!.
Bake for about 2 hours, until the meat falls off the bone!. The slower you cook it, the better it is!. You could also bake it in a 200 degrees F (95 degrees C) oven for 4 or 5 hours, or in a slow cooker without the foil or leaves!.
While the pork is cooking, make the sauce!. Bring the red wine vinegar to a boil in a small saucepan!. Add onions, reduce heat to medium-low, and simmer until tender!. Pour sauce over pork, and serve with white rice and corn tortillas!. Www@FoodAQ@Com

I love tacos but you've got that covered so I would go with Enchiladas,
it is not as time consuming as you'd think and it feeds several people quickly!.
Enchiladas:
1 pkg Corn Tortillas ( The ones by the flour tortillas)

Enchilada Sauce (2 8oz cans)
8oz can of tomato sauce
1 lb Ground Beef
3 cups Cheese (colby is always good or Colby Jack!.)

1!. heat oil in a pan (only enough to cover bottom about a inch)
2!. when oil is hot drop in 1 corn tortilla at a time, flip them and they
are done when they kind of bubble up!.
3!. place on a paper towel to absorb excess oil!.
Repeat until you have desired amount of tortillas!.
4!. Brown ground beef with garlic powder, salt and pepper!.
5!. Shred your cheese!.
6!. Then in a lg pan on stove top mix tomato sauce and enchilada sauce together and place over med heat, it will splash out so use a lid if possible!
When guest are ready to eat, take the tortillas and dip them in the sauce, they are fragile so be careful pulling them out!.
Then on a plate sprinkle with ground beef and cheese and ladle some sauce on top!.
There you have it Enchiladas!.

10 drops hot pepper sauce

also, margarittas, you can buy a cheap mix, add tequila and ice, and it's awesome!.

You add a bit of oil to the fry pan on medium, to toast the tortilla, but you make like a sandwich, so you add cheese, pre-cooked meat or chicken (my fave) and maybe salsa, you cover with another tortilla and you toast both sides until the middle is heated and the cheese is melted a bit!.

I have a shaker, but you can take two beer cups and add enough mix to fill 3/4 glass and top up with 1 oz tequilla and if you have triple sec, add 1 oz of that, if not, add more tequilla about 1/2 oz or to taste, add ice to cool and mix, add a cover with 2nd cup so you can shake it and nothing spills, like this shaker I use, http://pro!.corbis!.com/images/42-16935400!.!.!.
