Why do French use butter so much in their food?!

Fat adds flavour to food, so they use lots of fatty ingredients!. Actually it is mostly in the Haute Cuisine that you find this!.
French Provincial food is much more concentrating on regional produce being emphasised!. Using available ingredients!. So in spring and summer there will be lots of fresh veg, herbs etc in the food!. Rich tomato sauces and salads to die for!. In regions where dairy is a staple you will still find the fattiness though!.

Because butter tastes goooooooood, and cheese tastes gooooooood!. The French also eat very small portions so the fact that the food is quite rich isn't as bad as if you were eating huge American sized portions!.

The French use only fresh butter!. It is marvelous!. The butter in the states, and I'm assuming at least in most of Canada, is made for the mass market and is not nearly as good!. So the French use it a lot!. Remember, though, they don't stuff themselves!. They prefer quality over quantity!.Www@FoodAQ@Com
