SERVES 4 -6 (change servings and units)

Ingredients
1 kg potato, cut into quarters
2 tablespoons oil
2 onions, finely chopped
3 garlic cloves, crushed
1 teaspoon paprika
2 teaspoons sugar
1 teaspoon dried thyme
1 (425 g) can chopped tomatoes
2 tablespoons lemon juice
1/2 teaspoon grated fresh lemon rind
1 tablespoon tomato paste
12 black olives
1 tablespoon capers, rinsed and chopped
1 cup cubed or crumbled feta cheese
1 tablespoon parsley, roughly chopped


Directions
1-Boil potatoes until just tender!.
2-Heal oil in large pan, add onion and cook until soft!.
3-Add garlic and paprika and cook for 1 minute!.
4-Stir in tomatoes, juice, rind, sugar, tomato paste and thyme!.
5-Simmer, covered, for 5 minutes and then add the potato and toss to coat!.
6-Cook until potatoes are tender about 10 minutes!.
7-Stir occasionally to prevent burning!.
8-Remove pan from heat and just before serving stir through olives, capers and feta!.
9-Sprinkle parsley on top!.
10-Serve immediately!.

I know a recipe from Tuscany:
-pill potatoes,cut them in big pieces and boiled them not more than 5-10 min!.
-in a pan put a small quant!. of olive oil ,heat it and add:fresh rosemary,just leaves,2 or 3 garlic(not whole root!) and keep them till you sense a strong smell of rosemary, then add potatoes,mix gently and put all mixture into a pancake,lay it on whole surface and bake it into oven ,not high temp!. till potatoes become golden!.

They are oven roasted potatoes with spices!. Salt,pepper,oregano,rosemary and bayleaf and some lemon juice!.Www@FoodAQ@Com
