Green Chile Chicken Enchiladas
You'll need :
2 cups Chopped green chile ( Bueno brand, or fresh roasted, also called Anaheim Peppers, Long Green Chile, or Chile Verde)
1 package Corn torillas (not flour) either White, Yellow or for better look and taste try Blue Corn
3 Chicken breasts
1/2 Cup Flour
4 Tbs Oil
Shredded Cheese ( Cheddar, Colby, Long Horn, Colby Jack)
Try this!
Boil or slow cook chicken breasts id say 3 for family of 5!. Use boneless if you can!.
Then once its cooked shred it!. and set aside
In a deep skillet, LIGHTLY brown flour with oil
add stock little by little to desired thickness ( i prefer a thicker chile)
Then you can add your chopped green chiles
Let it reach boiling point!.
Simply tear up corn tortillas ( white, yellow, or blue) and toss them in the mixture
Let it boil for 5-7 minutes!.
Add cheese to top or mix in or both!!
