Question: Whats in the special sauce!? It's not soy sauce!.!?
So I go to this Japanese restaurant and they have a "special sauce" which is used for dipping your california roll!. It's the same consistency as soy sauce but not as salty and a lighter color!. I have seen the waitresses squirt in some of the sriracha sauce into it to make it spicy!. They also have chives floating in it!. What could possibly be the main ingredient in the sauce!. I love it and they won't tell me the recipe!. The thing is they have some interesting hours and I can't always get my rolls so I have to go elsewhere but it's never the same unless I have the special sauce!. It's probably shiro-shoyu or "white soy sauce"!. It's not white, but it's much lighter than most soy sauces because it's fermented for a shorter period of time!. It's got a very mellow and sweet aroma, excellent flavor and is very delicious!. A stronger "regular" soy sauce wouldn't be a good match with delicate sushi and sashimi!. I've usually had this soy sauce - or shiro dashi - served with toasted sesame seed and chives as a sauce!.

I like this recipe for a dipping sauce for chinese egg rolls!. It's very easy and tasty!.
Sweet& Sour Sauce recipe
NGREDIENTS (Nutrition)
3/4 cup white sugar or brown sugar
1/3 cup white vinegar
2/3 cup water or I would use pineapple juice
1/4 cup soy sauce
1 tablespoon ketchup
2 tablespoons cornstarch
DIRECTIONS
Place the sugar, vinegar, water, soy sauce, ketchup and cornstarch in a medium saucepan, and bring to a boil!. Stir continuously until the mixture has thickened!. Www@FoodAQ@Com

it could be a number of things i'm sure they wont tell you how to make it!.!.!. its supposed to keep you coming back!.!.!.trade secret!.
you can try to experiment with usukuchi shoyu!.!.!.milder than the usual soy sauce and maybe put leeks or
maybe use tentsuyu used for dipping soba (noodles) and substitute leeks with ginder!.!.!.(Japanese dont usually use chives!.!.!.maybe it could be myouga(japanese ginger) or shiso leaves)
if you're a regular customer, ask them if you can have the rolls to go and ask the waitress to put in lots of sauce!.!.!.
some restaurants sell their original sauces so it wont hurt to ask!.!.!.

Could be Ponzu, it's a light colored soy sauce with less salt and usually has a light citrus taste!. Good with lighter tasting fish :)
