Fried is the key word in your request, so you do expect to fry the chicken in some kind of oil or butter!. Fine, you can make a really good fried chicken with just salt & pepper!. Heat your pan really well if you are using oil to fry in!. About an inch of oil (shortening, vegetable, canola oil, olive oil) is good!. Add your chicken pieces fitting them into the frying pan without crowding!. Salt & pepper the pieces and watch as the chicken browns on the underside!. Turn the pieces and season again, now turn down the flame to medium and fry the pieces, turning them again until they are brown and crisp all over, a total of about 35 minutes!. If you wish to use all butter, add 2 TB of oil to keep the butter from burning!. Use a medium to low flame to fry the chicken, turning the pieces as noted above!. It will take longer to fry, about 40 minutes, but it will be very very good!. If you really mean to fry chicken without any fat using only salt and pepper, I think you can do it by placing the chicken pieces into a hot frying pan and turn the flame to low and let the chicken fry in it's own juices!. You should watch it carefully - if there is not enough fat and juices in the chicken try adding a couple of tablespoons of water, bottled Italian or French dressing, orange or lemon juice!. you CAN just use salt and pepper!. i did it this week and it was super good!. I heat a frying pan with some olive oil, add the boneless skinless thawed chicken breasts!. Season with salt and pepper, put the lid on and cook till you think it looks ready to turn!. Then turn it over, repeat seasoning if you want to, cook on the other side!. Leave the lid off to get it brown!. It turns out perfectly!. The seasoning DOES stick and it is really good!. We had ours with rice and fresh carrots!.Www@FoodAQ@Com

You can't cause the salt and pepper won't stick to the chicken or give the fried chicken a crispy coating!. You have to use flour to get a great fried chickenWww@FoodAQ@Com

Actually you could add some farina on your chicken!.It would make chicken more smooth and separate the meet from the pan without any ropy stuff!.Www@FoodAQ@Com
