If they are really thick, I split them so they can cook faster (so the floret isn't mush just to get the stem soft enough to chew)!.

Fancy restaurants even will take broccoli stems and slice them like carrot coins, steam them, and serve as a side dish! They have a nice color and shape, and goodness knows, they are using ALL of a head of broccoli!Www@FoodAQ@Com

I do - I peel the "bark" off and steam with the rest of the flower!. I suppose you could also use small chunks of stem like you would water chestnuts!.
