Thai noodle salad with peanut sauce?!


Question: Thai noodle salad with peanut sauce!?
Have you ever had that Thai noodle salad with peanut sauce, sesame seeds, and scallions!? I love that stuff and tried to make it yesterday but I don't think I used the right noodles!. I bought Thai Rice Noodles but they seemed a bit larger than what I have had in the past!. The noodles I have had in the past are VERY thin, almost the size of thin strings!. The noodles I bought were comparable to angel hair pasta!.!.!.a little to large and thick!. I have searched all over online and every site I've been to uses larger noodles or the same noodles I bought!. Should I go to an Asian market to look!?!? Any ideas about Thai noodles SMALLER than rice noodles!?!? Www@FoodAQ@Com

I was at a specialty market this weekend that had rice noodles that looked to be so thin it was like hair, like the lead in an !.05 mechanical pencil!. yes, I think an asian market will have them as wellWww@FoodAQ@Com

You want either rice vermicelli or bean thread noodles, soak them first and then add them blanched for 30 seconds to the rest of the salad base, or pour boiling water over them to soften them and then they need no actual cooking then!.

I am a former chef and have done alot of Thai, Vietnamese and south asian cooking in my time, I like mung bean or green bean noodles but the fine rice vermicelli is fine to, the thicker ones are better for "Pho" and in stir frys!.Www@FoodAQ@Com

You definitely want rice noodles, but they come in various thicknesses!. You'll need to find a store that carries more varieties to find the noodle you want!. Most oriental supermarkets carry a wide range!.Www@FoodAQ@Com
