Try this Chicken Koorma recipe!. If you want to use something vegetarian you could substitute chicken with a mixture of few vegetables like potatoes, carrots, corn, tomatoes, green peas, and beans

4 each cloves
3 each cardamom pods
1 each cinnamon stick
1 tablespoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon turmeric
6 each garlic cloves
1 each ginger fresh, peeled, 2 inch cube
2 cups yogurt
1 x salt to taste
3 1/2 pounds chicken breast halves, boneless and skinless cut into 2 inch pieces
2 tablespoons poppy seeds
2 tablespoons cashew nuts
10 each almonds blanched
2 tablespoons coconut unsweetened, shredded
2 tablespoons ghee (clarified butter)
3 large onions finely chopped
4 each green chili peppers fresh, minced
2 tablespoons cilantro chopped
Directions

Grind cloves, cardamom, cinnamon, coriander and cumin seeds with turmeric until you have a powder!.

Chop garlic and ginger into a paste!.

Combine both mixtures with yogurt and salt!.

Add chicken to this mixture and marinate 2-3 hours!.

Grind poppy seeds, cashews and almonds in a blender or spice mill until you have a powder!.

Combine with coconut and set aside!.

Heat ghee in a large skillet and cook onions until golden brown!.

Add poppy seed mixture and mix well!.

Put chicken and yogurt marinade into a heavy bottom pot!.

Add onion mixture, fresh chiles, half the cilantro and 1 1/2 cups water!.

Cook, uncovered, until chicken is tender and sauce thickens!.Www@FoodAQ@Com

I make something that isn't so much served with naan as it is on naan!. I loooove naan pizza!. I usually use tomato sauce, stretchy mozzarella, and vegetarian pepperoni, but when I'm energetic I make a more fusion version with a creamy tomato sauce (tomatoes, cream, cumin, coriander, and a little cardamom), spinach leaves, and little cubes of fried paneer!. Then I garnish the whole thing with a little chopped cilantro!.Www@FoodAQ@Com

very simple and delicious chicken recipe:
mix 70 g plain yogurt, 1 tsp tomato puree, 2 tbsp oil, juice of half a lemon, 1 tbsp curry powder and 2 chicken breasts cubed in a bowl!. leave to marinade in the fridge for 30 mins!. dump the chicken into a pan and cook until cooked!. ta dah!
