How to make a curry hotter?!
I have bought a thai curry, which is milder than I would like!. How can I make it hotter!? Is it ok just to add chilli powder straight into the dish, or do I need to fry the chilli then add to curry!?Www@FoodAQ@Com

There are several ways of spicing up a curry in India where curries are an every day affair,we use chillie powder ( dried red chillies ground to a fine powder ) to add hottness as well as colur to the curry,adding more powder directly into the curry can be done,but leaves a raw sort of taste,when i need a hotter curry i heat a spoonful of oil,allow it to partially cool then add the powder ( since chiilie powder burns easily )a quick stir around & tip it into the curry,simmer a while & you have a hotter & redder curry!.
Other ways are to cook whole split green chillies or chopped ones in the gravy,more seeds you leave in hotter the result !.green chiilie can also be ground to a paste & added to the curry!.Www@FoodAQ@Com

I think chilis are the key to making your curry hotter!. Fresh ones are best - I buy in bulk and then keep them in the freezer so that I've always got some available!. (I do the same with fresh ginger, chopping it up before I freeze it!.)
Whether you use fresh or powdered chili I would always fry it with the onions and other spices rather than just adding it to the sauce!.Www@FoodAQ@Com

Add Cayenne powder!.
Dried chili products respond to heat and to oil!. Frying pepper flakes in oil will release the heat more so than sprinkling them over food!.

Choice of chili depends on how hot you want and where you live!. The easiest is to buy Habenero peppers!. If that's too hot, try Serrano!.

I would add half a teaspoon full of chilli oil to the curry!.!.!.add more to taste if it isn't hot enough for you!.
Using the oil is an instant change in taste and doesn't change the colour of your dish!.

Just stir in a teaspoon of dried chilli flakes, fresh chillis, or some chilli powder!. You do not need a lot!.
Indian curry powders don't go well with thai curry, but the chilli powder will not taste like chilli con carne, it will taste just fiery as long as no cumin is added!.Www@FoodAQ@Com

Take the little red chilis and just add the seeds pounded to a paste with a morter (or morter subsitute) OR just add a couple of teaspoons of ground cayenne pepper that should do it for you also have you thought about just using a jalepeno!? Www@FoodAQ@Com

i would personally add madras curry to the dish!. It's the hottest curry i think!. but if you want to try the chili powder, I would add it straight to the dish!.Www@FoodAQ@Com
