I need a recipe for Korean rice cakes!?!
I LOVE to eat Korean rice cakes, and I want to try to make my own!. I googled it and I still can't find the recipe that I want!. I want to make the plain, cylindrical rice cakes that don't have any filling, topping, etc!. I just want plain, regular, white rice cakes!. Not the soup or the stir-fried spicy rice cake meal!. I've made my own rice cakes by adding boiling water to rice flour and beating it until smooth!. It is really thick and doughy when you get the water right!. Then you shape it, and I think you'd have to work pretty quickly to get it into any special shape before it cools!. Undoubtedly having industrial machinery helps!. I always made a flat shape, steamed it like that, then cut it into french fry shapes!. Www@FoodAQ@Com
Most people just buy the garaeddeok (or ddeok guk ddeok/ddeok) at the Korean grocer's, just due to the amount of work and special equipment you'd need to make these at home!. I'll spend hours making kimchi and mandu, but no way I'd have the patience for this! =)
Ddeok:
3 pounds uncooked glutinous rice (Korean chapssal)
water as needed
Potato Starch as needed
Place the rice in a large pot and add water to about 2 or three inches over the rice level!. Soak at least 12 hours!. Drain the rice and place in a large capacity steamer (Line the steaming tray with cloth)!. Steam the rice for 2 to 2 1/2 hours!. The rice should be mushy soft throughout!.
Transfer the steamed rice into the mortar and mash completely with the pestle!. Form the mashed rice into a mound at the bottom of the mortar and pound with the mallet, kneading occasionally, until a smooth dough-like consistency is achieved!. Dust the wooden prep board with potato starch!. Place the dough onto the board, pinch off a piece, and roll it into a long rope!. Cut into sticks or slice into the slices you'd use for ddeok guk (for example)!. Repeat until all dough is used!. Www@FoodAQ@Com

Ddok!? The kind you're describing is the same as the spicy kind and the kind in soup!.!.!. you just don't add anything to it!. Look at her recipes for rice cakes!. You can make this recipe, omitting the filling, and you should have a close approximation of what you want!. (Or you could go to your nearest Asian grocery!.)
