How can keep sushi fresh without drying it out?!

Question: How can keep sushi fresh without drying it out!?
I'm planning a party and I want to make Sushi!. I only make California rolls and veggie rolls!. And it takes me a good couple of hours to make and every time I make or buy sushi and then put it in the fridge the rice hardens and the nori drys out!. I'll need the sushi to stay fresh for for about five hours before my party!. In the past I've cut my sushi before putting in the fridge does keeping the sushi in the roll keep it better in the fridge!?

Does anyone know if damp paper towel over the sushi would work!? I'm open to any suggestions!.

Thanks Www@FoodAQ@Com

I'm Japanese and I do make sushi rice a lot!.

I would suggest that you should not use damp paper towels but damp towels over sushi rice!. And also if you can afford to buy sushi oke, buy that since sushi oke can keep rice from getting too dry!.And if you want your sushi rice to be fresh for about 5 hours, it's probably better for you to use two or three damp towels over the rice!. I don't think one damp towel can help the rice stay fresh!.

And you should not put any sushi rolls in a fridge!. That just makes sushi rice harder!.

Place a damp paper towel over your sushi rolls and wrap them in foil paper!. I was going to stay plastic wrap but plastic wrap is porous and will probably dry it out anyway!. foil paper isnt porous and will keep the rice and nori fresh longer!.!. try damping the towel a few more times thought those 5 hours to keep the sushi fresh and moist!.good luck!!Www@FoodAQ@Com

Damp CLOTH cover works better!. A friend of mine, Japanese, uses the method when catering parties!. Paper may get into the sushi!. Take care to use cloth well washed without softener!.Www@FoodAQ@Com

I was just going to suggest the damp paper towel!. Try plastic wrap over the sushi this should also work!. Www@FoodAQ@Com
