Question: Tandoori chicken mardinade - how much to 'shake off'!?
recipes say 'shake off the excess marinade' - does that mean clean if off completeley or can i leave some on - will the yoghurt burn etc!?Www@FoodAQ@Com

Depends on your cooking method:
In the grill (broiler), leave as much on as you want
In a non-stick pan or griddle: shake off anything that drips off
In a conventional pan, just leave a thin coating!. Best to marinate for as long as possible!.

also instead of using yoghurt, you can use lemon juice!. It tenderizes the meat very well!.Www@FoodAQ@Com

You should wipe-off the marinade with finger!. In addition
1!. You should baste the chicken with melted butter or Ghee before Baking!. This sears the surface and prevents drying out!.
2!. Do NOT re-use the marinate for another batch for food safety!. You can heat the marinade to near boiling spice it up and use it as a dip!.Www@FoodAQ@Com

I'd just let the yogurt drip off for a couple of seconds!. Yeah it will burn but its better like that!. Once its cooked put the chicken under a very hot grill until black spots appear!. When its cooked place all the chicken in a bowl and cover it with cling film immediately!. Leave this for 5 minutes!. Doing so stops the chicken from going too dry!.Www@FoodAQ@Com
