hi there,
Here are a few easy indian vegetarian dishes that i know off hand!!
enjoy!!

Potatoes & Peas (aloo matar):
3 tbsp vegetable oil
2 onions, diced
3 cloves garlic, minced
1 tsp fresh ginger, minced or grated
1 bay leaf
4 potatoes, chopped
1 1/2 cups peas
2 tbsp water
1 1/2 tsp garam masala
1 tsp paprika
2 tbsp chopped fresh cilantro
salt and pepper to taste

Preparation:
In a large skillet over medium high heat, sautee the onion, garlic and ginger for 3 to 5 minutes, or until onions are soft!.
Add the bay leaf, potatoes and peas and stir to combine!. Add the water!. Cover and allow to cook at least ten minutes, or until potatoes are almost softened!.

Add the garam masala and paprika!. Cover and cook another 8 to 10 minutes!.

Remove from heat!. Stir in the cilantro and add salt and pepper to taste!. Serve with rice if desired!.




Spicy chickpeas with Spinach (chana Masala):
1 can chickpeas in water (also called garbanzo beans) or 1 1/2 cups precooked + 1/2 cup water
1/2 onion, diced
3 cloved garlic, diced
3 tbsp olive oil
juice from one lemon, (approx 2 tbsp )
1/2 tsp cury powder
1/2 tsp coriander powder
1/2 tsp cumin
1/2 tsp garam masala
1 large bunch of spinach or two handfuls, rinsed

Preparation:
In a large skillet or frying pan, sautee onions and garlic in olive oil until soft, about 3-5 minutes!.
Add chickpeas straight from the can, including all the water!. Add spices and lemon juice, cover, and simmer about 10-15 minutes, stirring occasionally, adding more water if needed, until chickpeas are cooked and soft!.

Reduce heat, add spinach and cover!. Allow spinach to wilt for 2-4 minutes!. Serve immediately and enjoy your chana masala!



Eggplant Stir fry:
2 tbsp olive oil
1 eggplant, diced
2 cups broccoli, chopped
1 tsp salt
2 cloves garlic, minced
1/4 tsp asafetida (optional)
1/4 tsp cayenne pepper
1/4 tsp paprika
3 tbsp water

Preparation:
Sautee the eggplant and broccoli in the olive oil over high heat for 3-5 minutes, until eggplant is lightly browned!.
Add salt, asafetida, cayenne and paprika and stir to mix well!.

Reduce heat to medium low!. Add water and cover!. Allow to cook another 5-7 minutes, until broccoli is tender!.

Indian Salads (Raita) are simple and easy!. You can always decrease the amount of chilies or red chili powder to make the dishes less spicy!. These are inexpensive and travel well!.
