When I was a chef, I worked in a few place were we had that type of menu and cuisine, it has faded since the early 1980's when it started, more of the menus now are of a fusion type of menu and cuisine!.
Nouvelle was rich with cream and butter, more fresh veg and smaller portions and a dynamic plating style!. I was a saucier so I had the work of making the sauces, I used most day 4-6 qts/liters of 35% cream and most of the sauces were reductions with large amounts of butter, today with the caloric issues, people eating lighter and the regulations for food ingredients plus not alot of people like less fat!.
Now they make thing more a cross cuisine idea, like a bit of french, asian and others mingled to use a multitude of various ingredients, so I would say it is more a cross cuisine system!.Www@FoodAQ@Com

Nouvelle cuisine "new cuisine" is used in french cooking!. It basically means eating lighter more delicate food and focusing on presentation!. It's here to stay!. Www@FoodAQ@Com
