What is this chinese food?!
My wife and I were at a local chinese buffet!. One of the items basically looked like pieces of opaque foam!. It looks like when you bite into it it's going to break apart into a crispy mess!. But actually it was quite chewy and really compacted under the bite!. The only way I could describe it was a big damp flavor-less Cheeto!.
I asked the workers what it was and nobody could really tell me!. Either they didn't really know the correct way to describe it in English!.!.!.or they didn't know!. Now I'm wondering if I should've eaten it!.

Was it in the main dish!? or was it a dessert!? or by itself!? Need to be give more description!.
If its in the main dish its most likely tofu!.
By itself round things like desserts moon cakes, dim sum, typically its rice flour, or was it shrimp chips they're crispy, or a gelatin like thing its almond jello, or small round things in dessert like its tapioca balls they're large & chewy too!.

This sounds like a rice cracker sort of thing; though it is not really a cracker!. It is made out of the same thing as Chinese cellophane noodles, which I think I remember to be glutinous rice!. When I went through my cooking Chinese phase, I was taught to use them as garnishes and decorations!. They came in a bag and were very small!. You put them into hot oil, and they sort of expand and flatten out!. Most were white, some were dyed pink!. They sort of look like styrofoam!.Www@FoodAQ@Com
It sounds like agedashi, which is fried tofu after it is dusted with potato starch!. It is chewy, and like tofu, does not have much flavor, but absorbs the flavors around it!.Www@FoodAQ@Com
