Bicol Express
You will need plenty of rice to go with this very spicy pork dish from the Bicol region!.
1 kilo pork, cubed
1/4 cup shrimp paste (bagoong alamang)
8 pieces red chili pepper (siling labuyo), whole
10 pieces green jalapeno pepper (siling berde), chopped
3 cups coconut milk
5 cloves garlic, minced
1 big onion, chopped
3 tablespoons cooking oil
1!. In a frying pan heat the oil until hot!.
2!. Sautee garlic, onion, and shrimp paste!.
3!. Add the pork and half of the coconut milk!.
4!. Cover and simmer over medium heat for about 15 minutes!.
5!. Put in the remaining coconut milk, chili pepper, and green pepper!.
6!. Cook for another 10 minutes!.
7!. Serve with rice!.

Fish Escabeche
Fried fish, such as lapu-lapu or tilapia, with sweet and sour sauce!.
large fish such as lapu-lapu or tilapia
1 large onion, sliced
1 each of red and green bell pepper, julienned
1 cup grated unripe papaya
4 cloves garlic, crushed
2 tablespoons ginger, julienned
1 cup vinegar
1 tablespoon salt
3 tablespoon sugar
1 tablespoon cornstarch, dissolved in 1/2 cup water
1/2 teaspoon MSG or vetsin
1 cup cooking oil
1!. Clean the fish and rub with salt and vetsin!.
2!. In a frying pan, heat the oil and fry the fish until golden brown!.
3!. Place the fish in a serving dish and set aside!.
4!. Remove the used oil from the pan and put in about 1 tablespoon of fresh oil!.
5!. Saute the garlic, ginger, and onion!.
6!. Add the bell peppers and grated papaya and saute until half-cooked!.
7!. Put this mixture on top of the fish in the serving dish!.
8!. Return the pan to the heat and put the vinegar, salt and sugar!.
9!. Bring to a boil and thicken with the dissolved cornstarch!.
10!. Pour this sauce over the fish and serve immediately!.

PANSIT PHILIPINO (STIR FRY)

1/2 c!. cauliflower
2 c!. cabbage
3 carrots
1 green pepper
1/2 c!. onion
3 cloves garlic
1 pkg!. bean threads or rice sticks
1 c!. pork or chicken
1/2 c!. Chun King Soy Sauce
2 tbsp!. cooking oil
3 pkgs!. Top Ramen Noodles

2 packages pre-cut stir fry vegetables may be substituted!.

Cut vegetables into bite size pieces; set aside!. Cut pork or chicken into bite sized pieces!. In a large frying pan, combine oil, cut up garlic, brown!. Add meat and brown also!. Mix 1/2 cup water and 1/2 cup soy sauce, add to meat!. Dump in vegetables!. Steam for about 4 minutes, covered!.

Break up Ramen noodles and add to stir fry!. Cut up bean threads with scissors and add!. Stir!. You may add more water and soy sauce for noodles to cook but don't add to much!. Make sure vegetables are still a little crunchy!. Serves 6!.

PHILIPINO PORK ADOBO

3!.6 lbs!. diced pork
3 tbsp!. + 1 tsp!. soy sauce
2 tbsp!. vinegar
2 tsp!. dry garlic
1 tsp!. ginger
1 bay leaf
1 1/2 tsp!. salt
1 scant tsp!. black pepper
1/2 tsp!. hot sauce
1/4 c!. cornstarch
1 1/4 c!. warm water
1/2 lb!. fresh potatoes
1/2 lb!. med!. dry onions
2 lg!. green peppers

Cut pork into 1 1/2 inch cubes and place in roasting pan!. Combine soy sauce, vinegar and spices and pour over pork and stir to blend!. Marinate pork in mixture for 30 minutes!. Place pan in oven and cook at 350 degrees for 1 1/2 to 2 hours until meat is tender!. Stir every 15 minutes!. Mix cornstarch and warm water together and stir into pork mixture and continue to cook until mixture thickens!. Skim off fat!. Parboil and drain fresh potatoes, then deep fat fry them until done, then add to pork during the last 5-10 minutes of cooking!. Cut onions into 6 or 7 slices (medium size) and add to pork during last 10-15 minutes of cooking!. Cut peppers into 6 to 8 pieces each and add to pork 5 minutes before done!. Serves 10!.

My Filipino friends used to like to eat pork adobo!. Just seemed like we used to boil chunks of pork cut from a roast along with onions and pour in alot of soy sauce when you cut down the temp to simmer it!. They also liked the food at the nightclub called 'Manila Chef!.' People seemed to enjoy the pancit noodle dish!. Sometimes we went to a small filipino buffet place!. I tried the pork blood soup but, although I ate it, didn't find it very appealing!.Www@FoodAQ@Com
