Tom Kai Gow? I have been making some rich chicken stock and want a Thai cook's opinion?!
Whole chickens are cheap now so I keep buying them and am making batches of stock!.!.!.Today I bought some coconut milk/cream, daikon and baby bok choy!. I have some Mae Ploy green chile paste and also tamariind soup base on hand!.!.!.Looked at some recipes and am trying to figure out where to go!. (I think I will use the paste because galanga root costs too much in my store!.!.I have some frozen lime leaves)

I'm Thai & I don't know which cookbook you been using for making Thai food !.This soup call "Tom Kha Kai "In Thai language is mean ( simmered chickens with galanga roots in coconut milk)Thai peoples Never add Daikon Baby bok choy ,Tamarind & Curry paste on this soup
We make them By heat 2cup coconut milk & 1 1/2 cups chicken stock & bring to a boil than add 2 lemonglass Cut into 2 inch pieces and breaked , 4 Kaffir lime leaves torned & 3 -5 pieces galanga cut in to thin slice & continue simmering For 2-3 mins than add chickens keep simmering until chickens are tender than add some Shitake mushroom & wait until mushroom are cooked!. remove from the heat than seasoning with lemon juice & fish sauce & some bird eyes chilli garnish with chopped coriander
It's very simple & if you want a real taste of this soup you have to buy Galanga roots If the fresh one is Expensive buy a dried one in a package

no thanks, i hate thai food!. should never have been invented!. worked in a Thai restaurant and it just stank of fish, garlic and awful green chili curry!. I'll take Japanese, East Indian and Chinese anyday over that stuff!.Www@FoodAQ@Com
