What is the meat used in Pho broth?!


Question: What is the meat used in Pho broth!?
I was considering making homemade Pho (Vietnamese Noodle Soup), but wasn't completely sure on what meat to create the broth with!. I've heard it is made with ox tail, although I wasn't completely sure!. What meat is used in the broth!?

The beef broth for Pho is actually loosely based on the French consomme- from back when the French occupied Vietnam!. I've heard that oxtails is an easy shortcut to making the Pho beef broth!. The genuine recipe calls for simmering various ingredients (onions, anise, as well as beef bones) for a very long time!.

1 small onion, chopped
1 2-inch stick ginger
2 pounds beef bones
12 cups water
6 star anise
1 teaspoon salt
1 teaspoon sugar

Preparation:
Broil onion and ginger until they look burned!. Using back of cleaver, smash the ginger and set aside!.
Wash beef bones, place in a large soup pot and add water to cover!. Bring to a boil and immediately pour off this "first boiling" water and discard!. Add another 12 cups of fresh water and again bring to a boil!. Skim off foam!. Add the broiled onion and ginger, star anise, salt and sugar!. Over medium-low heat, simmer for 30 minutes!. Remove bones from broth and strain out vegetables and seasonings!.

I am a former chef and have a friend who owns and runs a Vietnamese restaurant, and he uses a combo of beef short ribs, pork rib ends, whole chickens and spices like star anise, fennel, garlic, lemongrass and galangal, all tied into a cloth sack or cheesecloth bundle, the beef take the longest to cook and you can also use oxtail for the short ribs or a piece of chuck or beef shanks something with flavour and will give you a rich stock, the same with the pork, even just bones or shoulder chops, and with the chicken parts like leg quarter are fine, the meat when cooked can be added back into the soup with the slice beef you pour the hot soup over!.

A good Pho stock will take 4-8 hours to cook, the chicken out first then the pork and finally the beef, there are stock cubes from Vietnam available if you want a short cut, I buy them here in Toronto Canada and cook some meat with them for extra flavour, adding onions and garlic for more taste, it is up to you the amounts of meat, type of meat and length of time you want to prepare it, it freezes well and will keep in the frig for 1-2 weeks!.Www@FoodAQ@Com
