How can I enjoy Mung beans ?!
I want to boil them, this is essential - right now it looks like a bit of a mess!. What can I do to enjoy them from here on!?Www@FoodAQ@Com

Ahh!.!.!. an answer after my own mama's heart!. Here's some things you can do!. You can boil them until they are soft then add rock candy and let that boil down!. It will be a typical asian dessert!. Add condensed milk and coconut milk and you will have a typical Vietnamese dessert!. You can also make mung beans by soaking them, boil them, then salt them!. You can deep fry them and add seasonings afterwards!. They will grow in size!. Let me know if you want any more recipes!. One thing you might want to do is let them sprout to bean sprouts and you have a whole other world of recipes!.Www@FoodAQ@Com
I had a really good salad with mung beans recently!. I don't remember exactly how to prepare them (to make them soft) but here's the rest of the recipe:
mix mung beans with 1 cup fresh or defrosted corn kernals
toss with:
1/4 cup lime juice
1/4 cup gomashio
stalk of chopped scallions
let it sit a while for the flavors to mix!.
don't have gomashio!? it's just a mix of roasted/toasted sesame seeds and salt!. 5 to 1 ratio seeds to salt!.
the original quantity of mung beans was 1 cup dry!. obviously, once they've soaked and boiled, it is a larger quantity!. I couldn't say how much!.Www@FoodAQ@Com

MUNG BEAN NOODLES
1 onion, sliced 1/4 c!. cooking oil 1 stewing chicken, cut into serving pieces 6 c!. water 2 stalks leeks, thinly sliced 2 stalks celery, thinly sliced 1 carrot, thinly sliced 1 tsp!. fish sauce 1 tsp!. salt 1/4 tsp!. black pepper 10 pieces dried mushrooms soaked in water 1 (8 oz!.) pkg!. Mung bean noodles
Soak Mung bean noodles in water and cut in 4-inch lengths!.
Stir garlic into the hot oil, then add onion and saute!. Add the chicken pieces and fry for 5 minutes!. Pour in water and add the leeks, celery, and carrots!.
Bring to a boil; season with fish sauce, salt, and pepper!. Cover and cook until chicken is almost tender!. Add mushrooms and Mung bean noodles!. Let boil for another 10 minutes or until noodles are tender!. Serve hot!.
