Before I got married, I had asked my mom to write me a few classic Nicaraguan recipies so that I could take them with me and practice in my new apartment!. I want to make something truly Nicaraguan but she hasn't done it yet!.!.!.!. anyone have any ideas!?Www@FoodAQ@Com

Fresco De Pina y Arroz
No meal is complete without some refreshment!. This chilled pineapple rice drink will definitely cool you down!.

Pineapple peel/rind
? cup uncooked white rice
Water
Boil pineapple rind for 10 minutes in sufficient water to cover the rinds half-way!. Add the rice and boil until it splits or puffs!. Allow to cool and then strain!. Dilute with twice the amount of water!. Add sugar as needed!.

Refried Beans
A popular dish, served as part of a variety of meals!.

Uncooked black beans
Garlic
Onion
Vegetable oil
salt
chopped tomato
lemon juice
seasonings
Boil washed beans in a pressure cooker until soft!. Add salt, garlic and onion during the cooking process!. Sauté onions in a pan!. Quickly add beans and left over water!. Continuously add more water as it cooks down!. This will ensure that the beans get a sweeter and smooth texture!. On the last round add the chopped tomato, lemon juice and seasoning!. Mash it up!.

Maduros
A tasty banana dessert!.

4 maduros (sweet bananas) peeled
3 cups milk
2 cinnamon sticks
2 cups sugar
1 teaspoon vanilla
Place maduros and milk in a bowl and boil until tender!. Add the sugar, cinnamon and vanilla, boiling for another 5 minutes!. Place it in a dish and bake in the oven for 30 minutes at 350°F!.

Gallo Pinto
Gallo Pinto is Nicaragua's most popular dish, eaten at any time of the day!.

2 tbsp vegetable oil
2 lrg onions – thinly sliced
2 cups cooked red beans
? cup water
1 cup cooked white rice
Beans: cook 1 cup of dry red beans with 6 crushed cloves of garlic and water in a pressure cooker for 15 to 20 minutes!. Sauté the onion in a pot!. Add in the cooked beans and water!. Cook for 5 minutes at a low heat whilst stirring!. The beans must remain whole!. Now add the cooked rice and simmer for a further 10 minutes, still stirring!.

Oxtail Stew
1/3 cup uncooked white beans
1 tablespoon lard
3 pounds of beef oxtails
3 cloves of garlic, peeled and crushed
1 medium yellow onion, peeled and diced
1 medium tomato, diced
2 cups of beef stock
2 cups of water (about)
2 tablespoons ground allspice
salt and pepper to taste
few shots of hot sauce

Soak the beans in cold water overnight OR place beans in a small saucepan with 1 cup of water and cover!. Bring to a boil and turn of heat!. Allow to sit for 1 hour covered with the heat off!.

In a heavy skillet brown the oxtails in lard!. Place them in a large (about 6 quart) stove top casserole or stock pot!. Add all the remaining ingredients except the water and beans!. Then, add just enough water to cover the contents of the pot, this should be about 2 cups more or less!.

Cover and simmer for 1 ? hours!. Drain the beans and add to the stock pot!. Continue cooking covered for an additional 1 ? hours!. Stir occasionally and add additional water if necessary, you do not want the pot to dry out!. If you like a thick stew, remove the lid during the last half hour of cooking!.

cane sugar - In the US often sold under the brand name Sugar In The Raw
quajada - a powdery soft cheese from Nicaragua
Roll the bread dough thin and cut into large triangles!. Place about half a teaspoons of cane sugar and a small piece of quajada on one corned of the triangle!. Fold over the other corner of the triangle and seal the edges!. Bake until the bread is done!. If you use refrigerated bread dough from a can it will only take a few minutes!. If you make the bread dough from scratch it will take a while longer!.
This is what I miss the most about Nicaragua!. Its almost impossible to duplicate in the US because quajada is so difficult to find, even in Hispanic neighborhoods!. And I never found another cheese that comes close in terms of texture or taste!. Make it with your favorite cheese instead
