What is in store bought salsa that gives it a bitter taste?!


Question: What is in store bought salsa that gives it a bitter taste!?
When I make it, all I use is Tomatoes, Cilantro, garlic, onions, lemonjuice, vinegar, salt, and a chili pepper!. And mine tastes more like a mexican salsa!.
Do they put something different in it!.

That bitter taste you are tasting either onions or the lemon juice!.

When lemon juice is mass-produced to serve as an additive (not as a juice, i!.e!. Lemonade), the lemons are processed roughly!. This sometimes includes the pith (the white bitter meat of the lemon), thus leaving the lemon juice slightly bitter!. When added to the salsa, the bitter juice is often transferred!.

Onions are also a culprit to the bitter taste!. Since onions are often cooked when the salsa is pasteurized, their natural bitterness is often accentuated in the sauce!.
