Question: Help with Japanese - Dashi!?
I need to make some dashi, but live in the middle of woop-woop and can't get hold of any kombu!. Is it possible to substitute wakame or hijike instead!? Thanks!.Www@FoodAQ@Com

I would go for hijiki, as it's generally a bit saltier than wakame, and that's a lot of the purpose of the kombu in dashi!. It's also darker, and more iron laden so I think it'll bring you closer to a kombu taste!. You can order kombu off the internet from a variety of Asian food specialty stores!. Even amazon!.com carries it!.Www@FoodAQ@Com

If a recipe asks for kombu, you can substitute wakame instead for an easier, lighter flavor option!. If you desire more mineral rich dish, opt for kombu rather than wakame!.

I've never tried hijike before, but it would probably work as well!.
