Answers:
I think it is a great idea!. Make a buffet with a build your own taco bar!.
http://www!.marthastewart!.com/menu/mexica!.!.!.
You could also make a big batch of enchiladas, refried beans, and rice!.
Don't forget the pitchers of margaritas and Coronas on Ice!.
Here is a great dip recipe to get your "Fiesta" started!.
7-Layer Fiesta Party Dip
SERVES 30 -36
6 (16 ounce) cans refried beans (nonfat, if you prefer)
1 1/2 cups salsa
3 (1 ounce) packages powdered taco seasoning (and cayenne, to taste)
48 ounces sour cream (lowfat or substitute, if you prefer)
9-12 cups guacamole
4 1/2 cups grated cheddar cheese
4 1/2 cups grated monterey jack cheese (or pepper jack)
6 roma tomatoes, chopped
6 (4 ounce) cans of chopped black olives (small cans, about 3/4 to 1 cup)
1 1/2 cups chopped green onions
In a bowl mix together the refried beans, half of the package of taco seasoning, the salsa, and 3 tablespoons of the sour cream!.
(You can add cayenne and/or ancho powder to taste!.) Spread the mixture into a large rectangular glass lasagna dish!.
(If you used two cans of beans and not all of the dip will fit in the dish, spread the remaining on a dinner plate and you can make your *own* dip to keep at home while you take the rest to the party!) In a separate bowl mix the rest of the sour cream with the remaining taco seasoning!.
Spread the sour cream mixture on top of the refried beans!.
Taking your guacamole, spread it carefully on top of the sour cream mixture!.
Take care not to mix the two together!.
Toss the two types of grated cheese together, then spread them on top of the guacamole!.
Sprinkle with the tomatoes, olives, and green onions!. Chill in refrigerator for at least an hour before serving!.
You can make this recipe a day ahead and let it sit in the fridge overnight - let it come to room temperature before serving with round, restaurant-style tortilla chips!. (The reason to serve it at room temp is so that when you attempt to dip your chips in they don't break!) Some folks like to serve this hot instead of cold: bake at 350 degrees F for 30 minutes, if you'd like to do that!.
The above is my basic recipe!. When I make it these days, I usually fiddle with it a bit, by: using 1 can of black bean refried beans instead of regular, adding ancho powder into the beans and sour cream, and adding a small can of chopped mild green chiles into the refried beans!.
Note: when I'm lucky enough to bring home any of this from a party as leftovers, I fill flour tortillas with the dip and fry them up as burritos!. They're wonderful both warm and cold, and taste great for lunch!Www@FoodAQ@Com

Tacos are only good if you have a grill outside!. The classic Mexican style bar b que has Marinated Flap Steak grilling outside with some Coronas!. That way when some people keep coming, you can always throw a fresh piece of meat on the grill and give them a fresh hot taco!. Get Ranchera meat or thin sliced flap steak!. and make some good hot salsa, and or guacamole!. also garnish tacos with chopped jalapeno or serrano chile, tomato, onions, cilantro, and lime!. Add salt/pepper and refrigerate for like 30 minutes!.
If you want to go the baking route, cook some good enchiladas and just keep them warm in a glass dish in the oven!. That way you can break them out any time!. It would be a melted version of the enchiladas!. Do not do had shell tacos, that requires frying, and are only good if you are going to serve people all at once!. If you want to fry though, I would suggest deep frying taquitos (rolled up chicken, beef, or pork) and topped with sour cream and guacamole!. Chop them up in small pieces and you can have appetizers!. also, make sure everyone has shots of tequila before the end of the night, it will help them forget if you made a good meal or not!.Www@FoodAQ@Com

Besides Mexican food has never lost its popularity unlike other ethnic food, here one day next gone!. I believe it's appropriate formal or informal!.Www@FoodAQ@Com
Mexican is a good meal to make, plus you can stretch this and make your life easy, you can serve tostada and rice and beans!. They can serve themselves if it's not formal!. Put out the fixings lettuce tomato etc!.!. and let then fill them themselves!. Finish off with desert of Pan Dulce (mexican bread) and you can make margaritas too!.
There are so many mexican dishes that you can make that will serve a lot and they are pretty easy too!. Almost every one like mexican and this will even work for vegetarians and vegans, people on a diet or on a restricted diet!.

I think it's a fine idea, as long as it's also stuff that everybody likes, and not too spicy!. Not everyone likes spicy!. Mexican is great because you can do a little to make everyone satisfied, even vegetarians!. Maybe make a buffet kind of thing!. Like stuff for fajitas and tacos, laid out so they can pick and choose what they want in them and that way, everyone's fed and happy!Www@FoodAQ@Com
Mexican isn't a meal; what kind of food would you be serving!? I think a taco bar would be a good choice because people could get what they want on it, and you don't have to be fancy!. Baking enchiladas might be nice, but it's more time consuming - same for quesadillas!.Www@FoodAQ@Com
sure its good!. It's also easy!. You can make a taco bar with toppings in bowls like: Cheese, tomatoe, onion, lettuce, sour cream, taco sauce, and what ever else you like on your taco!. This way everyone can have exactly what they want on their taco!.Www@FoodAQ@Com
Take note of Shine's suggestion in this bunch of answers!. She knows what she is talking about!. Mexican food is best when you invite a lot of people over to enjoy it with!. VIVA LA MEXICO and those wonderful people!.Www@FoodAQ@Com
