Onions in Turkish Restaurants?!


Question: Onions in Turkish Restaurants!?
Whenever I go to a Turksih restaurant they always serve rice, lettuce and seasoned sliced raw onions on the side of my kebabs!. I could never figure out what they put on the onions that made them so good!. They seemed to have both a red and green element to the spices!.

Any help would be appreciated it's driving me nuts!Www@FoodAQ@Com

Turkish Onion Salad
SERVES 2

Ingredients
1 medium red onion, peeled halved and thinly sliced
1/2 teaspoon freshly ground sea salt
2 teaspoons ground sumac or 2 tablespoon lemon juice
1/4 teaspoon ground chili powder
5 tablespoons finely chopped parsley
Directions
1Combine all ingredients and mix well!.
2Set in refrigerator for at least 30 minutes to mellow before serving!.

They are salted and then rinsed, pickled in vinegar, and they use parsley and a sourish berrie called sumac, and they use them for kabobs, shawarma, falafel and roasted lamb platters, sometimes even gyros!.Www@FoodAQ@Com

The onions are seasoned with salt, red pepper, sumac, parsley and lemon juice!. Sometimes mint is also added to the mix!.Www@FoodAQ@Com
