Ok lots of countries have different curries- but all good curries start with a paste of fresh and dried aromatics!. I'll give you one example of my Thai curry paste for massaman curry!. (like a basic red curry)!.

Fresh Ingredients
6 cloves of garlic
1 big knob of peeled sliced ginger
1 big knob of peeled sliced galangal (looks like ginger but is shinier, if u cant get just omit it)
4 inches sliced lemongrass from the root up
1/2 red onion, sliced
5 large dried red chillies, soaked for 20 min in boiling water
2 kaffir lime leaves (optional)
3/4 of a turmeric leaf (optional)
2 tbsp fish sauce
Canola oil + peanut oil
1 tbsp tamarind puree

Dry ingredients
1 tsp turmeric
1 tsp paprika
1 tsp salt
1 tsp pepper
1 tsp coriander seed, ground
1 tsp nutmeg
1 tbsp sugar

Pulse them in a blender and add the oils slowly until it becomes a thick red paste!. Do not add too much oil or it will become sloppy!. When you cook a curry, start with a little oil and fry the paste in it for a minute until the garlic and onion become slightly cooked and the spices become really fragrant!. Then just as it starts to change colour add in the liquid- either chicken stock or in thai food coconut cream and milk!. Then add your citrus lemon or lime and cook it down a bit before adding your meat / seafood / veg!. Enjoy! Www@FoodAQ@Com

For a good curry, nothing beats the UK's national dish, chicken tikka masala!. This easy recipe is really delicious and so much better than takeaway!.

Chicken Tikka Masala
Ingredients
900g chicken, boneless
1 small bunch of fresh coriander, chopped
1 tbsp fried onions
1/2 tsp salt
1/2 tbsp ginger paste
1/2 tbsp garlic paste
10 green chillies, chopped
100ml yogurt
100ml single cream
juice of 1/2 lime
1/2 tsp garam masala powder

Method
1!. Place the coriander, fried onions, salt, ginger paste, garlic paste, green chillies, yoghurt, cream and lime juice in a food processor!. Blend into a smooth paste!.

2!. Place the cubed chicken in a large bowl and toss thoroughly with the marinade paste!. Sprinkle over the garam masala!.

3!. Cover with cling film and marinate in the fridge for 1-2 days!.

4!. Preheat the oven to 200°C/Gas 6!.

5!. Spread the chicken out evenly in a roasting tray and dot with butter!.

6!. Roast for 10-15 minutes until the chicken is cooked through!. Serve hot from the oven!.

The best & most delicious curries are the ones made from scratch!. Using ready made curry powders, ready made masalas and pastes are convenient but they just dont do justice to a good home made curry from scratch!.

JAT PAT CHICKEN CURRY: this is easy & delicious, best of all made from scratch!

Ingredients:

1 lb chicken pieces, boneless/skinless
1 large onion, diced
2 cloves of garlic, finely minced
1 inch piece of ginger, peeled & finely minced
1 can of tomato puree (if you use crushed tomatoes, puree them)
1 tsp ground cumin
1 tsp turmeric
1 tsp ground coriander
1 tsp garam masala
1/2 red chili powder (to taste)
salt to taste
juice of 1 lemon
oil (veg or canola)
water as needed (or chicken stock)
freshly chopped cilantro leaves for garnish

METHOD:

In a large deep skillet on medium high heat, add 2 tbsp of oil and saute the onion until slightly browned!. Add the ginger & garlic, stir fry for 1-2 minutes and add the spices!. Stir fry & let the spices cook out for 3-4 minutes until fragrant!. Add the chicken pieces and mix to coat well!. Once the chicken has turned opaque, add the tomatoes and a little water to cover!.

Reduce the heat, cover & let simmer 10-12 minutes!. The chicken should be fully cooked but tender & juicy!. Add lemon juice, adjust the seasonings, garnish & serve!.

All the spices are easily available in any large grocery store and definitely in any Indian grocery store!.

Better yet, PARAMPARA is a really good brand of ready made spice mixutures (masalas) that you can find in any Indian store and they are delicious & easy!. It's basically adding chicken, Parampara ready made masala packet & water! They come in lots of flavors too!.

you cannot get easier than this recipe!.

1 onion
2 gloves garlic
1 teaspoon mixed spice
1 teaspoon sugar
2 tablespoon curry powder
1 small tin apple sauce
1 small tin tomato puree
1/4 chicken stock
1/2 pint milk
12oz cooked chicken



Method

Fry onions, garlic, spices, sugar and curry powder, Add remaining ingredients, stir well, serve on a bed of rice!.
