Does anyone have a recipe for Spanish Galletas, a large round plain cracker?!


Question: Does anyone have a recipe for Spanish Galletas, a large round plain cracker!?
In some of the Spanish bodegas in New York, they sell them in packages, like a stack of pancakes!.!.!.

They are not sweet at all, rather bland, and go with guava paste and fresh white cheese!.!.(queso fresco) !.!.!.!.!.!.

They look as though they are made of a batter poured directly onto baking sheets !.!.!.!.Perhaps I should experiment, but I would love a recipe !! thank you !.!.!.xxx

These are specically known as "Galleta de Soda" (also galleta por soda) or soda crackers!. The term "galleta" is just a generic term for cookie in Spanish!.

Here's a basic recipe I found, you can tweak it and experiment!

Galleta de Soda

Yield: 4 servings

4 c flour
1 tsp baking powder
3/4 c butter, Crisco, lard or shortening
1 1/3 c milk or water
salt to taste

Mix flour, baking powder and shortening as for a pie crust!. Add liquid and cut in with a knife!. Form a ball of dough and cut into four pieces!. Roll 1/4 out very thin, as thin as possible!. Cut with cutter (6" diameter) and place on cookie or baking sheet!. Prick with a fork 4-5 times and sprinkle with salt (to your own taste!.) Bake at 375°F until golden!. May be turned once!. Watch carefully bake until golden & crisp!.Www@FoodAQ@Com

I'm originally from NYC, and they are great with the white cheese! You should be able to find both in any large supermarket!. Shoprite, Pathmark, Acme!.!.!.
