Italians: Can anyone of you give me a great recipe for cannoli?!

Cannoli 'Alla Sicilana'
Yield: 20 to 25 4-inch shells 20 cannoli shells 1 recipe cannoli cream (see recipe)
1/2 cup pistachios, toasted, finely chopped
Confectioner's sugar, as needed
Cannoli preparation
1!. 3/4 cup flour
2!. 3/4 tablespoon butter, melted
3!. 1/4 teaspoon salt
4!. 1/2 tablespoon sugar
5!. 1/2 teaspoon white wine vinegar
6!. 1/2 teaspoon cocoa powder
7!. 1/2 teaspoon espresso, ground fine
8!. 1/4 cup marsala or red wine
* Sift together all dry ingredients and put into the bowl of a standing mixer fitted with the paddle attachment!. Pour melted butter, vinegar, and marsala into mixer and begin to incorporate!. Mix until smooth and firm!. Rest dough in refrigerator for 30 minutes!.
* Gather 1 cup dusting flour, 1 egg wash, cannoli tubes, trays with paper towels, and food spray and knife!.
* Roll out dough by hand and cut with 4-inch round!. Preheat deep fryer with clean oil to 350 F!. Grease cream horn tubes with oil and loosely wrap each disc around the tube; seal the edge with egg whites, being careful not to get egg whites on the metal tube!. Fry in batches about 3 minutes each or until golden brown and crisp!. Remove cannoli shells from tubes and cool on absorbent towels and reserve!.
Ricotta Filling
1!. 3/4 pound fresh ricotta fresh
2!. 1/2 cup sugar
3!. 1/2 teaspoon vanilla extract
4!. Pinch of cinnamon, ground
5!. 1/4 cup chocolate chips
6!. 2 tablespoons tutti frutti (candied fruit, citron), chopped (optional)
* Combine first four ingredients in a bowl and whip ingredients until creamy!. Fold in chocolate chips and tutti frutti (or any candied fruit if desired)!.
* Place filling in piping bag and reserve!. Fill cannoli, 2 to 3 shells stuffed per portion!. Dip in pistachios the two ends and serve!.

I've never made the shells so can't help there, but I used this filling for another recipe over the weekend and determined it would be amazing as cannoli filling!.

1 cup powdered sugar
1/2 cup unsweetened cocoa powder
zest of 1 orange
1 1/2 cups mini chocolate chips
Beat first three ingredients together until well blended!. Stir in zest and chips!. Then pipe this into your shells!. Decorate ends with more chips or roasted pistachios!. Www@FoodAQ@Com
