1!. to make asian food depends on which kind of cooking method!. usually a wok is used when stir frying or deep frying!. because of the shape, is it easier to control the heat and the amount of oil used when stir frying!. as for deep frying, it allows the food to maintain their original shape rather than having a flat surface when u use a flat pan or pot!.

2!. simple asian dish can vary in different cultures and types!. for example

2!.1 the simple northern chinese could be the spicy sauce noodles!. you'll just require the brown coloured dark soy sauce (you can use premium soy sauce as replacement), caramel/honey, chili sauce and a little tinge of parsley mixed with boiled white noodles served dried!.

2!.2 thai green papaya salad!. of course you'll need green unripped papaya sliced with carrots, lettuce/ cabbage!. mixed with thai sweet & sour chili sauce and add a little fish sauce!. you can add cold shrimps for garnishing!.

2!.3 korean mixed rice!. you'll just need some rice, any type of vegetable sliced with some minced meat (not fish though)!. add in some sesame with a drop or 2 of fish sauce mixed together with their korean chili paste!.

(i suppose that's enough for quite a while!?)

3!. the traditional type of chinese spring roll only consists of vegetables!. like lettuce, carrots, boiled radish, mushroom sliced, bean sprouts and add some salt/ sugar to taste!. spring rolls uses this yellowish coloured skin something that is like tortilla!.!.!. and deep fry!.
if you can't find such "skin" as we call it here!.!.!. you can just spread beaten egg on tortilla before adding the ingredients taste juz the same!.!.!.
oh, ps: spring rolls need to taste sweeter and add a tinge of white pepper to entice the taste

Bulgogi (Grilled marinated Beef) Recip

Ingredients: 2 lb beef (loin tip steak)*, thin sliced
3 green onions, sliced in a bias
4 button mushrooms, sliced
1/2 onion, thinly sliced
1/4 cup soy sauce, 1/4 cup sugar, 1/4 cup water
2 tbsp sesame oil, 2 tsp pepper
1 tsp sesame seeds, 1-2 tbsp minced garlic
1 tbsp juice of ginger
1/2 onion, grind in a food processor
(*Or any parts for grilling)

Have sliced beef very thin!.

Combine all ingredients in a big bowl!.
Marinade beef and vegetables for at least 30 minutes!.
1-2 hours is the best, after more than several hours it will taste too salty!.

Grill the beef!.

Serve with rice!.

You don't need a wok to make Asian food, but to make it easily and well a wok is a good idea!. The wok allows you to cook at very high temperatures and have room to toss things around!. If you try to use a normal frying pan you will often find things either burn to the bottom at stir-fry temperatures or that you've flung them all over the stove-top in an effort to prevent sticking!. The other distinct advantage of a wok is that when it becomes seasoned it is virtually stick-free!. Of course I'm a bit of a cheater so all of my woks have non-stick coating lol!.

Simple asian dish!? Doesn't get any easier than stir fried tofu and veggies with soy sauce!. Dump it on noodles or rice and you're good to go!.

Spring rolls usually are filled with vegetables and can also have meat or noodles!. They are almost always wrapped in rice paper here!. Some places will use the flour based egg-roll wrapper but really that makes it just more of a vegetarian egg-roll than a spring roll!.Www@FoodAQ@Com

STIR FRIED BEEF

Serves 2

INGREDIENTS

250g of beef
? a bunch of spring onions
112g (? a 225g tin) of bamboo shoots
1 tablespoon of sunflower oil
120g sachet of black bean or oyster sauce

METHOD

Cut the beef into very thin strips!. Wash the spring onions, cut off the root ends and leaves, peel off and discard any dried up or slimy outer leaves, then chop into 1cm (? inch) pieces!. Open the tin of bamboo shoots and drain off the liquid!.

Put the oil into a frying pan or wok on a medium heat!. Add the beef!. Fry for about 3 minutes until cooked!. Stir frequently to stop it sticking!. Add the spring onions!. Continue to fry for another minute!. Stir frequently to stop it sticking!. Add the bamboo shoots and sauce!. Continue to fry for another minute!. Stir frequently to stop it sticking!.

ADDITIONS & ALTERNATIVES

Use pork instead of the beef!. Add 112g (? a 225g tin) of water chestnuts!. Add ? a sweet pepper, cut into slices (see below)!. Serve with boiled rice or noodles!.

TIPS

HOW TO CUT A ROUND SWEET PEPPER INTO STRAIGHT SLICES

Cut the top and bottom off but don’t throw them away!. Remove and discard the middle bit with the seeds!. Make a cut down the pepper!. Open it out!. The round pepper is now a rectangular pepper!. Cut into slices!. Cut the stalk out of the top end and then chop it and the bottom end into tiny pieces!. Add the chopped pepper to the dish!.Www@FoodAQ@Com

No, I've worked with Chinese people who don't like or use woks at home!. Spring rolls aren't made from dough, some are made from rice paper which you get either at your supermarket or from an Asian food store!. Then there are the deep fried ones, I'm not sure that those ones are made from rice paper but I know they don't use dough!.

There are lots of simple Asian dishes, just google Asian recipes & same for spring roll recipes!. Or go to a book store or your library & get an Asian recipe book, there are loads of them!. And next time it's your birthday ask people to buy recipe books!.Www@FoodAQ@Com

SPRING ROLLS

1 lb!. of lean ground pork or 1 lb!. thin sliced chicken breast or 1 lb!. sliced turkey breast
1/2 c!. of each of the different vegetables (carrots, mushrooms, cabbage, broccoli, bean sprouts, etc!.)
1 tsp!. grated ginger
Salt & pepper
1 tbsp!. Worcestershire sauce
1 tsp!. cornstarch dissolved in a little water
Spring roll wrappers or lumpia wrappers

Heat a wok or a large fry pan, put in 1 tablespoon of oil!. When hot, add the meat of your choice!. Fry it well and then add the vegetables of your choice!. Add the ginger, salt and pepper and the Worcestershire sauce, saute them for a minute!. Pour over the cornstarch which you dissolved in a little water!. Stir everything to blend well!. Remove from the heat!. Make sure all the ingredients are dry by the end!.
Take a sheet of spring roll, spread 1 1/2 teaspoons of the mixture on each sheet, moisten all the sides with beaten egg or milk!. Fold the 2 side edges and roll the sheet!. Heat oil for deep frying and fry rolls until golden brown!. Drain them on paper towels!.

P!.S!. You can use less meat and more vegetables!.


DIP FOR SPRING ROLLS:

In a small fry pan fry 1 to 2 cloves of garlic with 1/2 teaspoon sesame oil (don't burn the garlic)!. Pour in soy sauce (amount depends on how many spring rolls you make)!. When the soy sauce is warm, remove from heat!. Dip the spring rolls in!.

ASIAN CHICKEN SALAD

4 cooked chicken breasts
1 1/2 heads lettuce
3 green onions, sliced
1 (3 oz!.) can chow mein noodles
1 (4 oz!.) pkg!. sliced almonds
4 tbsp!. sugar
2 tsp!. salt
1/2 tsp!. paprika
4 tbsp!. vinegar
1/2 c!. oil

Cut chicken into bite-sized pieces and toss with the first 5 ingredients!. Mix the last 6 ingredients together for the dressing and chill for an hour before serving!.
