Question: Italian food that isn't pasta or mostly cheese based!?
Please read this question before posting!.

I've been watching a lot of cooking shows lately, and it seems like much vegetarian (I'm veg) Italian food is mostly pasta or cheese based, like spaghetti, lasagna, eggplant parmesan!. (Those are the only examples I can think of right now!.)

I'm just wondering, are there any recipes whose two main ingredients don't consist of a variation of pasta or cheese!? Yes, I realize that there's a lot of seafood that would qualify, but I'm looking for veg options!. (I'm not sticking this in the vegetarian section because I figure I'll get a wider variety of answers here!.)

This would make a wonderful side dish!.!.!. maybe a main dish if you're a veg!.!.!.!.

Roasted Cipolline Onions
Giada

2 pounds cipolline onions
2/3 cup balsamic vinegar
1 tablespoon plus 1/3 cup extra-virgin olive oil
1 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning

Bring a large pot of water to boil!. Add the onions and cook for 2 minutes!. Drain and cool!. Peel the onions and cut off the root ends!.
Preheat the oven to 450 degrees F!.

Toss the onions, vinegar, 1 tablespoon oil, 1/2 teaspoon of salt and 1/4 teaspoon of pepper in a 13 by 9-inch baking dish!. Roast in the oven until the onions are tender and golden, stirring occasionally, about 1 hour!.

Initially I was going to suggest meat-based Italian fare, such as:

1!. Italian Meatloaf
2!. Sausage with peppers and onions
3!. Chicken Piccatta
4!. Chicken Marsala
5!. Steak with Italian herbs and a gorgonzola cream sauce

but then, you mentioned that you're a vegetarian!. So here are some OTHER ideas:

1!. Eggplant Parmesan
2!. Fresh spinach sauteed with garlic and parmesan cheese
3!. Fresh green beans with garlic, red peppers, and olive oil
4!. Pasta with olive oil, artichoke hearts, olives and shaved parmesan
5!. Pasta with white beans

I'm not a vegetarian so I really don't know!. Get a decent cookbook by a real Italian chef!.

Mediterranean countries have loads of veg recipes because they have the best veges and the poorest (least wealthy) cooks!. In Italy go south (Naples down) for the best vegetarian recipes!. Www@FoodAQ@Com

I recommend checking out Giada DeLaurentis on Food Network!. Recently, she did a whole episode on cooking Italian food for vegetarians!. I believe that one of the dishes was pasta, but there were some other ones, including an eggplant parmesan (with minimal cheese) that looked delicious!.

I think Food Network's Giada does a great job w/ different Italian recipes!. also, I don't think cheese is junk food!. It has protein, calcium and is better than foods that "appear" to be healthy, but actually have trans fats and high fructose corn syrup!.Www@FoodAQ@Com

my daughter and her husband make a DEElishous eggplant parm!. you can leave off the cheese if you want to!. and she makes it gluten free too and its super yummilishous! have a great salad or cold 3 bean vegetarian dish to go along w/it!. antipasto salad would go great too!. happy cooking!Www@FoodAQ@Com
