Well, it's the national dish and everyone's is different!. It's a HUGE production to make from scratch, so I suppose they take pride in it (if the make it themselves)!. I've never thought of Koreans as being "touchy" about kimchi!. I lived in Korea for a year and never noticed anyone fly off the handle about anything kimchi-related!. Www@FoodAQ@Com
It's their national dish!. Koreans are extremely patriotic and kimchi is something like a symbol of Korea!. It's like when you think of pizza, you think of Italy!.
