Dim Sum "small eats" or snacks !.Meaning "to touch your heart," dim sum consists of a variety of dumplings, steamed dishes and other goodies!. They are similar to hors d'oeuvres!. Today the term seems to only be used for fried or steamed dumpling's I used to love going to China Town in NYC!. The restaurants there still have the dim sum carts that they roll over to your table before your main course is served!. It would have small plates of all kinds of "appetizers"!. Your package, cheung fan, is the pasta type product that many dim sum dishes are made with!. It is wrapped around things like bbq'd pork, or made into the dumplings I mentioned earlier!. Go to 12hk!.com and about!.com, and look up chinese food!. You can find recipes and the history of many of these foods as well!.Www@FoodAQ@Com

OH! Rice rolls! It's these long strips of rice noodle that are rolled up!.
It's a Cantonese type food that is made my steaming (or microwaving) the rolls!. My mom usually makes it by chopping up the rolls into bite-sized pieces, microwaves them, and puts soy sauce, some oyster sauce and a dash of oil!.
At some Chinese restaurants that serve these, they would pan-fry it and put the same seasonings!.
