I've heard the same thing Bardic has!. I've been eating black beans since I was a kid and my family never made a fuss about the water!.!.!.!. and never heard a "sound" of disapproval!. Www@FoodAQ@Com

There is a sugar called Raffinose!. When the dried beans are soaked in water, the sugar leaches out in the water!. This sugar is responsible to cause gas discomfort!. This is one of the reasons to pre-soak the beans and get rid of part of the raffinose!. Of course the other reason is to fully hydrate the beans!.
The pre-soaking also breaks loose the dirt from the surface to easily rinse away!. If your beans weree clean and you don't care about raffinose, go ahead use the water in the stew!. It will cause no harm!.Www@FoodAQ@Com

The only thing the dissolved in the soaking water is some of the indigestible sugars from the beans and dirt!. You lose no nutrients by throwing it away!.
The only beans that contain toxins are red kidney beans-they are completely safe after thoroughly cooked!.Www@FoodAQ@Com

The simple answer to why you should discard the water is because it's dirty!. The main reason we soak certain beans is to clean and soften them!. Then we cook them in clean water or better yet, chicken stock!.

I've heard that soaking removes starches and indigestible sugars which otherwise cause, er, gastric disturbance!. The "baked bean" effect, only worse !. !. !.Www@FoodAQ@Com
