Stuffed Oysters
Ingredients
1 cup grated parmesan cheese
1/2 cup finely diced green onion
1/2 cup diced red bell pepper
1/4 cup butter, softened
4-5 cloves garlic, smashed
1 lemon, juice of
1 teaspoon sugar or honey
1 pinch salt
1 pinch pepper
12 medium oysters, scrubbed
Directions
1Combine the cheese, green onions,bell pepper, butter, garlic, lemon juice, soy sauce, sugar or honey, salt and pepper in a medium bowl; and stir to evenly blend!.
2Preheat the broiler!.
3Shuck the oysters, setting the cupped bottom shell in a shallow baking dish!.
4Put an oyster in each shell and top with a generous tablespoon of the stuffing!.
5Broil the oysters about 4 inches from the element until heated through and golden brown, about 8 minutes!.

Oysters Gabriel
Ingredients
3 (36 ounce) jars oysters, drained and reserve juice
1/4 cup butter or margarine
1 large onion, chopped
1/4 teaspoon thyme
3/4 teaspoon oregano
3 teaspoons garlic powder
1/4 teaspoon crushed red pepper flakes
2 teaspoons dried parsley
2 tablespoons dry vermouth
salt and pepper
1 cup chopped artichoke heart
1 cup Italian seasoned breadcrumbs
parmesan cheese
Directions
1Melt butter in large skillet!.
2Saute onion, thyme, oregano, garlic powder, red pepper, parsley, and vermouth, salt and pepper!.
3Add oysters; when edges curl, add the reserved oyster juice; fold in bread crumbs and artichoke hearts!.
4Pour into buttered 2 quart casserole and cover with Parmesan cheese!.
5Bake at 350 degrees for 15-20 minutes!.

Corn Oysters
Ingredients
1 cup corn (either fresh off the cob or canned whole kernel, drained)
1/4 cup flour
1/2 teaspoon salt
1 egg, beaten
3 tablespoons milk or light cream
1 tablespoon melted butter
salt and pepper
butter (for frying)
Directions
1Scrape or grate corn from cob!.
2Mix flour/ salt with egg and milk to make a batter!.
3Stir in the corn!.
4Drop by spoonfuls into hot butter and fry until brown; turn over and brown other side!.
5Serve hot!.

Gorgonzola Oysters
Ingredients
10 oysters
3 ounces gorgonzola
1/2 garlic clove, chopped
1/4 panko Japanese-style bread crumbs
2 tablespoons butter, softened
Directions
1Preheat the oven to 350°F!.
2Open the oysters and discard their liquid!.
3In a small bowl, combine the gorgonzola, garlic, bread crumbs, and butter!.
4Mix well!.
5Place the oysters on a baking sheet!.
6Pour the gorgonzola mixture over them!.
7Bake for 10 minutes!.

Andouille Crusted Oysters With Mixed Baby Greens
Ingredients
8 oz Andouille sausage; crumbled
2 tb Minced shallots
1 ts Minced garlic
1 c Bread crumbs
1 tb Emeril's Essence; see * Note
24 lg Shucked oysters
1 c Flour
2 Eggs; slightly beaten

1 c Prepared or homemade
-mayonnaise
1/4 c Buttermilk
1/4 c Herbsaint
1 ts Minced garlic
Salt; to taste
Freshly-ground black pepper;
- to taste
4 c Assorted baby greens
(arugula, red and green oak,
- red an
green leaf, radicchio, lola
-rosa)
8 Bread sticks - (12" long)
4 oz Parmigiano-Reggiano cheese
-block; shaved
Preparation
* Note: See the "Emeril's Essence Information" recipe which is included
inthis collection!.

Preheat the fryer!.
For the oysters: In a saute pan, render the andouille for 1 to 2
minutes!. Add the shallots and garlic and continue rendering for 1 minute!.
Remove from the stove and cool slightly!. In a food processor, add the
andouille, bread crumbs, and Emeril's Essence, blend until fully
incorporated!. Dredge each oyster in the flour!. Dip the oyster
into the beaten eggs, letting any excess drip off!. Dredge the oysters in
the andouille crust, coating each side completely!. Place the oysters in
the fryer and fry for 2 to 3 minutes or until golden-brown and their edges
start to curl!. Remove from the fryer and place on a paper-lined plate!.
Season with Essence!. For the dressing: In a mixing bowl, combine
all the ingredients together and mix until smooth!. Season with salt and
pepper!. In a mixing bowl, toss the greens with the
dressing!. Reseason if needed!. Mound the greens in the center of the
plate!. Dot the rim with any remaining dressing!. Arrange the oysters
around the greens!. Garnish with the shaved Parmigiano-Reggiano, bread sticks and black pepper!. This recipe yields 4
servings!.

Stir Fried Oysters With Garlic & Green Onio
Ingredients
1 lb oysters, shucked
1 ts cornstarch
1 ts oyster sauce
1 1/2 ts soy sauce
1/8 ts salt
1 tb oil
1/2 ts white wine
2 garlic cloves; minced
2 green onions; in 2 pieces
1 1/4 slice gingerroot *
Preparation
*Note: Gingerroot should be chopped!. Bring 4 cups water in large
saucepan to boil!. Plunge oysters into boiling water!. Cook 10 to 15
seconds, until edges begin to curl!. Remove with slotted spoon to
paper towels to drain!. Blend cornstarch with 2 tablespoons water
until smooth!. Stir in oyster sauce, soy sauce and salt!. Set aside!.
Heat oil in wok until hot!. Add wine, oysters, garlic, green onions
and ginger!. Stir-fry 15 seconds!. Drain off any excess liquid that
accumulates!. Stir in reserved sauce!. Stir-fry 1 minute, just until

Fried Oyster

Ingredients:

2 quarts vegetable oil, for deep frying
? cup all-purpose flour
1 teaspoon salt
? teaspoon ground black pepper
12 ounces shucked oysters, drained
2 eggs, lightly beaten
? cup bread crumbs

Directions:

Preheat deep fryer to 375°F!.
In a bowl, combine flour, salt and pepper!. Dredge oysters in flour mixture, dip in egg then roll in bread crumbs!.
Slide oysters into preheated fryer!. Cook in batches until golden brown, about 2 minutes each time!. Drain briefly on paper towels!.



Grilled or Barbecued Oysters

Ingredients:

36 large fresh oysters in the shell*
Melted butter
Hot sauce
Lemon wedges

Directions:

Oysters in the shell must be sold live by law, as all bi-valves must be!. They should feel heavy and full of water!. Live ones will be tightly clamped shut, or will clamp shut when tapped!. Dead oysters will have loose shells and must be discarded along with those which have broken shells!. The flavor is best when they are consumed within 24 hours of purchase!.

Preheat barbecue grill!. Scrub the oyster shells under cold running water with a brush!. Discard any open shells, as the oyster is dead and not edible

Place oysters (cup side on bottom) on hot grill about 4 inches from hot coals!. Cover barbecue with lid, open any vents, and cook 8 to 10 minutes (depending on size) or until shells begin to open to indicate doneness!. Remove all oysters when the first one opens!. Some shells will not be opened, so some prying will be necessary!. Using a mitt or towel to protect your hand, remove the oysters from the grill, taking care not to spill their juices!.

Pry the oysters the rest of the way open with an oyster knife, paring knife, or screwdriver!. Sever the muscle that connect the shells, leaving the oyster on the half shell!. Transfer onto a serving platter!. Serve with melted butter, your favorite hot sauce, and lemon wedges

It might sound kinda funny, but there's a restaurant in my town that offers "Smoked Oyster's" as a topping choice!. I have experimented with the garlic cream pizza sauce with oysters, artichoke hearts, mushrooms, and tomatoes!. It was truly delicious!

You could take the main ingredient on this one and run with it!

I LOVE oysters- my aunt makes this tart/pie every holiday, um, yummy ,different, and really really good!

Oyster Pie

Pastry for a 2-crust pie
2 T!. flour
1 qt!. oysters
1/4 C chopped green onions
1/4 t!. salt
2 T!. butter or margarine
2 T!. chopped parsley
1/2 t!. hot pepper sauce OR to taste

Prepare pastry!. Roll out half of dough into 12" circle and line a
9" pie platewith it!. Sprinkle with 1 T!. of the flour!. Drain
oysters, saying 1/4 of the liquor!. (Check oysters for bits of
sand, grit, shell, or pearls) Pour oystrs into pie shell!. Top
with green onions, parsley and salt!. Dot with butter!. Combine
oyster liquor and hot pepper sauce!. pour over oysters!.
Sprinkle with remaining flour!. Roll out remaining pastry to make
a top crust!. Cut vents!. Top pie, and trim edges!. Bake at 350
degrees for 50 minutes or until done!. Serves 6
