Keep rice from getting hard?!
when I make sushi the rice is good while still warm!. however after you refrigerate the rice, which is left over it gets hard!. How do you keep it from getting hard!. Is there a type of rice I don't know about or do I cook it to death like put a lot of water to make it mushy!. Www@FoodAQ@Com

OK ~ here is my suggestion!.!.!. first of all, you should know how rice is cooked (different places, different ways)!.
In USA you use 2 cups of water to 1 cup rice!.
Taiwan (and maybe China) 1!.5 cups water to 1 cup rice!.
Philippines, it's 1 to 1 (I call the result rocks)!.
Now let's go to where you take it out of the fridge (ref)!. If you want the rice tender but not slimy, after you take it out add a few drops of water (then a few more drops) and put in a microwave!. Nuke until hot, and you'll wind up with a good tender rice!.Www@FoodAQ@Com

Are you using sushi rice!? It's normally starchier so it will contain water better!. The water should be up to the knuckles in you hand, not the fingers!. Are you putting a lid on the rice!? When my rice gets hard in the fridge I will put it in a bowl, add water in the bottom, then microwave with a plate on top and it usually gets sticky again!. Microwave for about 30 seconds with just like 2 tablespoons of water (I'm not sure if that's enough because I just gauge it buy staring at the water!. It should just be enough to cover the bottom surface!.) It's like re-steaming rice!.Www@FoodAQ@Com
If you have made the sushi rice, using Japanese rice that has been properly cooled and sushi flavoring, you do not need to refrigerate it!. It will still be good left at room temperature for one more day!. It will not get hard!. You can reheat the rice by placing a wet paper towel over the bowl and micro wave for a minute or two (depending on how much you have left over)!. Www@FoodAQ@Com
I freeze my rice! after you cook it, immidiately wrap your rice with saran wrap tightly! twist the saran wrap closed and stick it in the freezer!. It's important to do it like right after you cook it because that way it retains it's moisture!. When you want to use it again just stick the whole thing (still wrapped) in the microwave untill its cooked!. seriously it tastes like you just cooked it :)Www@FoodAQ@Com
how long do you want to keep the rice!? if for a day you can keep it warm in the rice cooker, if kept for too long the rice will gone bad!.

put plastic wrap directly on top of the rice to make a seal, then put a lid on top of that!.Www@FoodAQ@Com
