Sushi question anyone?!


Question: Sushi question anyone!?
I like making Japanese cuisine, but the only thing is when I make sushi, and when I put it in the refrigerator, it dries up!.

What I do is I have some 'sticky rice' and I put it in my rice cooker that doesn't have a timer, but a switch and a light!. When you put it on cook, the light turns red, and when it's done, it goes to heat and the light turns orange!.

It sure is sticky and feels like rice, but it dries up when I make it cold!

LEG's suggestion of wrapping the rice is a good one and likely to work somewhat, but sushi rice is usually prepared to be eaten shortly after!.
also, you didn't mention it, but are you adding sushi vinegar before refrigerating!? I don't think it will make much difference to the drying up problem, but you might want to experiment!. About!.com has a standard recipe for sushi-rice -

I ask the same question a few days ago!. I got pretty much silimar answers!. Here's what I suggest!. You cannot prevent rice from drying up or get hard once you refrigerate it!. However, when you want to use it again, just microwave the rice and add a little water to it to get it soft again!. Once soft, add vinegar and do your sushi!. Thats what I did with the rice that was left over!. Www@FoodAQ@Com

Real sticky or sushi rice stays moist with the addition of rice vinegar!. It is also a shorter grain which has more starch--more moisture!. It is usually prepared fresh and never refrigerated!. I suggest putting damp paper towels over it, and refreshing them as often as need!.

Wrap your left over maki rolls in a damp paper towel then wrap with plastic cling wrap!. This also works with vietnamese spring rolls!.Www@FoodAQ@Com

Sorry, but there is really no solution to this!. Rice will always dry up when it is refrigerated!.!.sticky or not!. This is why sushi should be eaten as fresh a possible!.
