My boyf has been going on about me cooking for him!.!. I dont kno where to start with african food!. Any1 got any ideas on recipies!? thanks!Www@FoodAQ@Com

Food varies from the different regions in Africa--West Africa, North Africa, East Africa, South Africa (Ive traveled all over Africa-and these are recipes that I like and I will include a great website

West African Yassa Chicken

1-2 chickens cut into serving pieces
6-8 large onions, sliced
2 tablespoons of Dijon-style mustard
3 heads of garlic (optional)
1 cup of vinegar
1 teaspoon of cayenne pepper or 1/8 teaspoon fresh habanero pepper
1 tablespoon of black pepper (freshly ground)
4 Maggi ? cubes
1 bay leaf
6 lemons or limes
Salt to taste
Cooking oil

(you can add sliced carrots or shredded cabbage as a garnish)
Wash the chicken pieces and dry them with a clean cloth!.

Now score the chicken and set aside for later!.

In a large cooking-pot, mix the onions, garlic, vinegar, lemon juice, bay leaf, mustard, vinegar and chilies!.

Now add the chicken pieces, stirring in well - preferably by hand!.

Let the chicken marinate for at least one hour!. (For the best results you can keep the chicken marinating in the fridge for several hours or overnight)!.

Before any cooking, remove the chicken pieces from the marinade; and, grill, over charcoal, until done on both sides!.

Remove the onions from the marinade; sauté gently in a little oil until soft and brown!.

Add the marinade and cook for five minutes!.

To this, add the chicken pieces and half a cup of water!.

Cover with lid and simmer for approximately 30 minutes or until the chicken is properly cooked; adding the Maggie cubes, salt and pepper to taste!.


Coconut Rice

Make white rice the way you regualry do but add a can of coconut milk in place of one of the cups of water!. You can add chopped onions also!.

If you don't want to make rice then make coucous!.

Fried or baked plaintains-
Slice riped plaintains add to an skillet w/ a little bit oil and lightly fry
OR Bake in oven

North africa is great for their tagines and use of goats' meat!.
Off the East coast and in Zanzibar and Tanzania they use a lot of spices together with things like cinnamon!.

In general, African food is made from inexpensive cuts of meat, usually slow cooked with spices and sometimes fruits like dates and apricots!.

Cooking outdoors on wood fires is also popular as many African families don't have electricity or electric cookers!. So bread made over the fire is popular (think roosterkoek and askoek)!.

Pineapples, coconut, mangoes, papaya, watermelon are popular as is buttermilk!.

South African tribal food uses lots of tomatoes and pap (white maize meal)!. Chicken is a hugely popular meat choice and many traditional dishes are quite simple but oily!.

INGREDIENTS (Nutrition)
1 1/4 teaspoons ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/8 teaspoon ground cayenne pepper
1/2 teaspoon ground cardamom
1/4 teaspoon ground coriander
1/4 teaspoon ground allspice
1 tablespoon olive oil
1 red onion, cut in half and thinly sliced
1 red, green, or yellow bell pepper, cut into 1" pieces
2 zucchinis, halved lengthwise and cut into 3/4 inch pieces
1/2 cup golden raisins
1 teaspoon kosher salt
grated zest of one orange
1 (14!.5 ounce) can low sodium garbanzo beans, rinsed and drained
1 1/2 cups chicken broth
1/2 cup orange juice
1 1/2 cups couscous
3 tablespoons chopped fresh mint

DIRECTIONS
Place a large, heavy bottomed pot over medium heat!. Stir in the cumin, ginger, cloves, cayenne, cardamom, coriander, and allspice; gently toast until fragrant, about 2 to 3 minutes!. Stir in oil and onion, cook until softened!. Stir in the bell pepper, and zucchini; cook for 5 minutes!. Stir in the raisins, salt, zest, and garbanzos!.
Pour in the chicken broth and orange juice; turn heat to high and bring to a boil!. When the mixture is boiling, stir in the couscous and remove from heat; cover, and let stand 5 minutes!. Fluff with a fork, and fold in chopped mintWww@FoodAQ@Com
