For puri, does it matter if you use indian flour or not?!

Both are right, I am a former chef and even a bit of Atta flour (whole wheat) is fine for a nuttier taste, just sift it and make up the puri, and let it rest before rolling, I have a puri press, I use it for tortilla to, and frying make sure the oil is not to hot or the outside is cooked and inside is still doughy, one at a time is best, drain them and even wrap them in foil and keep warm in the oven like naan!.Www@FoodAQ@Com
You can most definitely use all purpose flour although I prefer pooris made using atta, they just taste better and are more authentic!. But if you dont have atta, by all means use all purpose flour (known as maida in Hindi):
However, pooris made using maida (all purpose flour) tend to absorb more oil and are much crispier & crunchier (instead of softer atta pooris)!.
