I am a former chef and have worked in Asia, and the only thing that would tend to turn a curry paste is the oil used when the ingredients were ground to make it, if does not have a musty taste and when you cook with it the flavours are still there then it is fine, alot of the dates are more sell by dates fro imported foods as they have no refrigeration in some country's and most would nt keep it chill anyways, if you use it refrigerate the unused portion and use it in 6 months!.Www@FoodAQ@Com

I'm not familiar with the particular type of curry paste you mention, but I do use various sorts of Indian curry pastes from time to time!.

I've occasionally kept opened jars of that stuff in the fridge for months without anything going "off": there's not a lot of oil to go rancid and the salt and spices seem to prevent mould from growing!. I've used it with no ill effects whatsoever!.

If your paste has a lot of stuff that can go bad or act as a breeding material for microorganisms (a high concentration of coconut milk, for example), then I'd be wary of keeping an open container around for long!. If the container is still closed and if it has been kept in reasonably cool conditions, I wouldn't worry about it being out of date by a few weeks!.

I suggest you use your common sense: if it looks all right and smells all right, it probably is all right!. Particularly so if it's going to be used only in cooked foods!.

While I do pay attention to "Best Before" dates, they are sometimes very obviously arbitrary and seem to be put on the container mainly to satisfy the legal requirement that every foodstuff should have an expiry date!.Www@FoodAQ@Com
