This is my favorite recipe:
season the trout with paprika and salt, let it stay for 30 min,
Put a little butter, some tarragon and a slice of lemon inside of fish, wrap it in lavash bread ( you can find it in any Traider Joes market) Brash the bread with olive oil and bake it in oven for 30 min!.
Serve it hot
You will have a crusty bread outside and a yummy fish inside

Grilled Trout
Prepare trout: rub with oil and sprinkle with salt or seasoning!. Place in fish basket if available or place on preheated grill rack and cook for about 15 minutes, turning as needed!.

All the years my family fished for trout, we found our favorite was the simplest!.
We put a pat of butter, pepper and a lemon wedge inside each fish!. Place fish in baking pan and cover with foil!. Cook in a 350 degree F oven for about an hour!. To check for done-ness, the meat will no longer be translucent and will be flaky!. It is easy to remove the skin and main back bones strip after cooking!. Beware though as there are other bones in trout that you'll have to watch out for!.
With left-overs we make trout salad the next day!. It's made just the way you would make your favorite tuna salad!.
