As someone else already mentioned, there are numerous different types of sausages in Germany!. The history of all of them is pretty much the same: It was a way of preserving meat to last out longer (in the way of sausages that were smoked) or to use the meat and parts from the animals that you could not use in anything else!.
As to ingredients: That depends on what sausage you are talking about!. Some sausages are prepared only from pork, some have lamb in it, some veal, some beef, some are made from boar, some are made with liver, some are made with blood!.!.!.
As for the "Sauerkraut" dish: Sauerkraut, like someone said, is actually the German word for pickled white cabbage!. It is eaten in some combinations, and there are also several with sausages!. There is the usual dish of Bratwurst (a sausage made usually from pork, but that can have other ingredients as well; it is prepared by frying or barbecuing it), served with a serving of Sauerkraut, a serving of mashed potatoes, and some mustard!.
You can also serve Sauerkraut with small spiced "Leberwurst" (translates to "Liver-sausage"!. It is not what US Americans refer to as "Braunschweiger"!. That is "Leberwurst", too, but there is a difference between the Leberwurst you heat up in Sauerkraut and the Leberwurst you spread on bread!. And I know you're not from the US, it was just in case this could mean something to you that I added this info! ;)) and "Blutwurst" (translates to "blood sausage" and is, indeed, made with blood!. Pork's blood, to be exact!. I have been told it would not work with any other kind of blood, but than again, that information could be wrong!.)!. Those sausages are usually simply heated up in the same pot as the Sauerkraut is, and the whole is served with mashed potatoes again!.
Another variant of the "Sauerkraut" kind is mixing the Sauerkraut and the mashed potatoes together and serving it with steamed sausages called "Mettenden" or "Kaminwurzen" or "Wingertsstecken" - there are numerous other names for it, and basically they all mean the same: A smoked sausage prepared from uncooked pork!. The sausage is, for this dish, warmed up/cooked through in warm water and served with the Sauerkraut/mashed potato mixture!. It can be eaten cold without any risk, too, though, since it is smoked!.

Then talk about the taste of it, the ingredients, when it is most commonly eaten, when it was first made/by whom (basically your history stuff there)
